Soak boondi in Luke warm water before adding to the curd to get rid from oil in that
I love all your videos ❤️ just to simplify the stuffing I would suggest put only salt, fine chopped onion and chilli that's it this simple stuffing is amazing try once. Coriander leaves are optional!

Mayo dear agar aage se aapke paas besan available nahi ho to chana dal ko 2hours pani me bhego ke rakh de. Uske bad nikal le aur grinder me bina pani ke grind kar len.apka homemade besan ready ho jayega.

Yes u can use maida and very little rice flour and a pinch of haldi and half pinch of backing soda as a jugad.

p.s try this recipe for Paratha next time...its a simple one from my family... boiled potato, finely chopped green chillies, salt, pinch or two of carom seeds, fresh coriander leaves i.e. cilantro (no powdered spices) I think you'll like it 😊 you can add thinly grated mozerella cheese as well if u like it cheesy...serve it up achaar or cucumber raita 🥰 I like my raita with Yogurt and dry garlic chutney mixed 😁

I live in Japan and have been teaching English to working professionals for 14 years now...so, I think I can answer the question: First, Japanese business people are not risk takers like Koreans, second, bureaucracy in India is terrible and last but not least, Vietnam doesn't have too much diversity( in terms of States/ taxes etc) like India and the Infrastructure is much better there....I hope I was able to satisfy your curiosity🙂
