To me, Mayuri’s comment about Okarin leaving her isn’t about jealousy but it’s about Okarin’s worry and panic. I think she knows Okarin is a bit delusion and they do experiments for fun and he’s got his wacky alter-ego, however things have been getting more serious and it’s clear to Mayuri that Okarin is more serious and more worried than he normally is, and Mayuri feels like she is losing the Okarin she knows. Also I think it’s a comment on how each time the world line changes, Okarin’s personality must change slightly. He’s still mostly the same Okarin, but essentially he is an Okarin that has came from another timeline, with different experiences and behaviours. Most people might still think Okarin is the same, but to Mayuri, who’s known him her whole life, she can tell he’s not his usual self.
I binged this reaction series really quickly, anime reactions are something I like, and Steins;Gate is my favorite anime, but I haven't found anyone other than you that has really paid close attention to the little details and theorize what is going on like you do.

Check out "BlindWave". They watch the dub version (while I personally like it less, it's actually not bad localization) They have a pretty good reaction series to this (although they never watched 0 sadly)
In case that you're confused about his "power", the way Reading Steiner works is like cut - replace. The memories of Okabe from the previous world line would just replace the memories of Okabe in the new world line, meaning he won't remember anything that has happened in that world line before the time he got transported there by his reading steiner. He doesn't really "lose" memories like other people because he's the only one who can retain his memories even after the world line shift, it's just that he didn't experience it to begin with, so it's normal thay he doesn't know the history of the new world line. Meaning, every time the reading steiner activates, he's basically erasing the version of Okabe that exists in that world line and replacing it with his memories from the previous world line. There's no actual time traveling YET in this part of the story, he's just sending mails to change the past and if that mail is important enough to change the world line, then the Reading Steiner would activate and do its thing.
The change of the d-mail feyris sent was not limited to store, but the whole structure of akihabara, this is why okarin glanced around at the city at the end, this includes the cultures that was implemented by feyris ( the anime stuff )
I am pretty sure , the way japanese voiced actor have dubbed these characters, I laughed hard in Sub, pretty sure in DUB I would have ruined my experience because most of the times I am creeper out by the English voice acting in it!!
Jokes tend to hit better in your native language, though I gagged every time I heard a Star Trek joke or Reddit tier shit. Which is the biggest issue with the dub script. @Channel is based on 2Chan, as such if you are dubbing into an English equivalent that people understand you use 4Chan jokes not Reddit ones. Two very different internet cultures with wildly different rules surrounding them. Also given that the Japanese contained many Death Note references (as common on 2Chan) it really would not have been hard to make those references but using the Dub of Death Note. If you watched Steins;Gate you probably watched Death Note, no need to make cringe Star Trek references. At the very least they could have gone with a better Star Trek series instead of Next Gen, should have been DS9 which as I recall is significantly more popular on 4Chan and in retrospect has become THE fan favorite.

I really really like that outro because that's when you know that things are changing and Okabe's control over it is getting smaller and smaller.
At 7:02 , Okabe says "Keikaku Doori". It's actually a reference to the famous dialogue by Light Yagami and they both share the same voice actor!

When I watched Zombieland Saga and heard Tatsumi voice for the frist time I thinked: This voice is familiar. When he shouted "zombie" I remember.
