    One of if not my favorite kit brews is Coopers Australian Bitter when made to style. Style being based off of the "2010 Australian Amateur Brewing Championship Style Guidelines". The guidelines mention 30% cane sugar as typical so figured that to be 1.75 lbs to the 3.75 lbs kit for 5.5 gallons for a 1.041 wort. Yes cane sugar, not dextrose. Guidelines mentioned "CUB ale yeast or similar. Most commercial versions are all lagers". I rolled with WLP German Lager yeast. CUB was nothing I've heard of in the states back in 2011 when I was attempting this style but had the German lager on hand. Going by memory, ferment at 55f for about 10 days, rest at room temp for 3 days then keg. After several of these brews, I had a new respect for cane sugar as an adjunct. I didn't find it cidery but more like dry cotton candy.
    I'm curious if you as an Aussie native can confirm my interpretations.

      Hi I have not done anything like that before but I will certainly have a go now it sounds very tasty indeed. I am going to keep this in the files and use it for my next extract brew if that's alright with you. I am sorry if I can't answer your query about this one as this idea is new to me.     Would be good to see a few reviews of some of the extract brews you've done (once they've aged). You might get a chance if we get locked down. I was thinking of doing the Australian Bitter also.

    Hey mate, curious.. when you pressurised the fermenter, does that carb the beer while you're going? I've never seen that done

      Hi Anthony, Yes it does. The first one I did surprised me when I transferred it it had almost full carbonation.

    Speaking from experience you might want to find a way to mount that on a wall. Nobody is getting younger.
