They are made with coconut milk that might be the secret recipe well not so secret anymore .2 cups rice flour (not sweet glutinous rice flour unless you are making a mochi version of this recipe)
1 cup all purpose flour
2 tsp baking powder
4 tbsp tapioca starch (or corn or potato starch)
1/4 tsp salt
4 large eggs
2 cups coconut milk
1/4 tsp pandan extract
1 cup sugar

My mom makes them for me for my birthday. She uses our store recipe too! During tet my parents set up shop at our mall during the festivities and they always sell out.

A friend’s bakery also has pandan waffles that are very similar to what you’re describing! its a little denser, and has a harder crust, but its very chewy on the inside :)

My little Vietnamese self got hit with nostalgia like a bullet train. I remember these kinds of waffles being served at festivals hosted at a mall during the new year as a kid.. man those were good times, the waffles were so tasty too.
I figured out that recipe! Just leave the batter out on the kitchen table for a week or so and voila! Green waffles.

Yes i have! Im vietnamese myself and ive tried these waffles once at my vietnamese church and they are sweet!
Yes. We make them here in Philippines. When I make some for my own, I usually have a thick consistency and I add ice cubes / chilled soda water to chill the batter to get the crispy texture on the outside just like when you’re making tempura. Natural pandan leaves are subtle in flavor but there is also a pandan extract that gives a more concentrated flavor.
What does pandan taste like?

Chill the entire batter for 30mins.

1 large brown banana or 2 tbsp coconut sugar
2 tsp baking powder
1 ½ cups (338 ml) unsweeted almond milk (from Alpro)
3 tbsp coconut oil
2 cups spinach leaves
pinch of salt
optional: fried or poached egg
Method
1
Heat up your waffle maker

Blitz all ingredients in a NutriBullet (don’t over blitz)

Grease your waffle maker plates with coconut oil

Pour out some batter and let cook until brown

You can place the waffles in the oven to keep warm (100C)

Optional: fry an egg or poach an egg to eat with your waffles

In Vietnam, we have many delicious desserts made from pandan. We usualy grind the pandan leaves with water or milk, then drain it and get the pandan extract, mix the extract with the batter and it’s done. The same may work with pancakes or you can just simply buy the pandan extract.

I never really tried pandan waffles, But! There's an Indonesian dessert called "putu" it is made out of the exact same pandan mixture like that. It also has some shredded coconut and i like to add a little bit of shredded brown sugar on top. You should really try it! It's really good :)
