Love this! I only bake my sourdough is loaf pans, typically at 450. Currently awaiting my SB oven’s arrival-would you recommend preheating to just 450? Or higher since the temperature goes down during loading?
Even if the display shows the temperature going down during loading, the stones of the Oven retain all the heat, so the drop in temperature won't negatively affect your baking ;) We recommend sticking to your usual recipe and adjusting in the future if you notice a difference!

So there are no issues putting cold pans on the hot stones?
Could you make this recipe with only AP flour? And if so, would you need to adjust the hydration due to the lack of whole wheat present?
