- Today, I am going to be making five daikon Recipes.
Japanese way of preparing the Daikon making it so delicious and flavorful and not bitter. Winter daikon makes juicy and sweet simmered daikon, try this recipe with your fresh local produce to experience the hearty Japanese home cooking.
Basic Simmered Daikon
1kg Daikon
2 pieces Kombu Kelp (10cm×15cm)
1L water
100ml Light soy sauce
100ml Mirin
Tororo Kombu/ Miso sauce ※optional
Buta-Bara Daikon
500g (1lb +2oz) Daikon
500g (1lb +2oz) Pork Belly (block)
2 cups(480ml) water
30g (1oz) Ginger
1/2 cup (120ml) Sake
2 tbs Sugar
3 tbs Soy sauce
scallion ※optional
Quick Buta-Bara Daikon
300g (1lb +2oz) Daikon
300g (1lb +2oz) Pork Belly (block)
1/2 cup (120ml) water
10g (0.4 oz) Ginger
1 clove garlic
Daikon Leaves
1/2 cup (120ml) Sake
1 tbs Sugar
2 tbs Soy sauce
1 tbs Potato starch + 1 tbs water
Yuzu Daikon
500g (1lb +2oz) Daikon
5g (1 tbs) Salt
1 Yuzu
1 piece Kombu (5cm×5cm)
Daikon Peel Tsukemono
500g Daikon skin (before drying)
1 tbs Sugar
1 tbs Mirin
1 tbs Soy sauce
2 pods Chili pepper
1 piece Kombu (5cm×5cm)

the butabara daikon looks so good and filling! what is the flavour of daikon leaves like?
The butabara daikon is indeed delicious! Daikon leaves have a slightly peppery taste, similar to arugula. Give it a try!
The local Korean store where I shop does not actually carry Daikon. They have somthing called a korean Radish which looks just like the large Daikon you used in this video. Are they comparable? I may try them. I have to get Daikon at a different store, which is annoying.
I love Daikon and am always happy for another recipe.
I would really love to make the Yuzu Daikon, but I don't think I can get fresh Yuzu in the U.S., so I will see how it is with Lemon.
I am not sure I have the planning skills needed to make sun dried daikon peel, but I may try. Always good to use something instead of throwing it away.

Japanese daikon radish has a tapered tip, but Korean daikon radish has a thick tip. Indeed, the "Ajimarumi radish" I used may be similar to Korean radish. You can also make it in the same way with Korean radish, so give it a try! thank you as always.
