    INGREDIENTS AND METHOD
    Hello Everyone!
    Welcome to my channel!
    Turkish Borek
    (Spinach & Feta Filo Pastry)
    Prepare Spinach & Feta filling
    Spinach (1 cup or 150-200 g)
    [Washed, dried & chopped]
    Feta Cheese (400 g)
    Cut into small chunks
    You can adjust quantities of fillings according to your taste!
    You can even add filling (another cheese/cooked meat) of your choice!
    Add feta in a bowl along with spinach
    Then add...
    Egg (1 medium-large)
    Black Pepper (1/4 tsp or to taste)
    Red Chilli Flakes (1 tsp or to taste)
    Combine well
    Prepare Egg wash
    Egg (1 medium-large)
    Beat well
    Oil (1/3 cup or 80 ml )
    Milk (1/3 cup or 80 ml )
    Salt (a pinch)
    Combine well
    Filo Pastry (250g or 10-12 sheets)
    Filo pastry dries out fast...
    Cover filo with baking paper then a damp tea towel
    This prevents the filo from drying out!
    Grease sheet/baking pan
    Place the first sheet
    Add 3-4 tbsp of egg wash
    Spread all over the sheet
    Place the second sheet on top
    (repeat all steps until you have added 3-4 sheet with egg wash in between them)
    Add half of the spinach & feta filling
    Add 3-4 sheets as before (egg wash in between them)
    Add the remaining half of the filling
    Finally, add 3-4 more sheets with egg wash in between them
    Apply thick layer of egg wash on top
    Cut borek into 12 equal pieces
    Sprinkle some Sesame seeds & Nigella seeds
    Bake in a preheated oven at 180C/350F/Gas mark 4 for 35-40 minutes
    Here it is
    all nicely baked!
    Crispy Spinach & Feta Cheese Borek
    ready to serve!
