Lovly, some of my favourite ways to do potatoes. There is a third option to get dry cooked potatoes though & that's the microwave. It does a very good job dauphine/choux potatoes. Often if I do the baked/oven prep method, I'll halve the potato length ways, scrape out the flesh, do all the mixing [sometimes adding ham or cooked onion cut finely]. Then pipe it back into the skin & finish in the oven; sort of a fully loaded dauphine baked potato.🥔😋

I think this video is fantastic! It’s so instructive, and said with so much passion. I hate to say it, but the French are so much better at cooking than we English are. Napoleon said we were a nation of beef eaters lol! I wish l could spend Christmas in France…

I live in eastern Europe and we had French potatoes in the supermarket for a few years - very yellow and delicious but it was never mentioned a sort. Just french potatoes. These are very pale in your video. I had no idea there are so many sorts of potatoes. :))
As long as it doesn't contain goose fat or any other animal fat it's fine. And how many French people would understand phrases like 'bog standard'? Quite impressed!...

I've read that there are about 4000 varieties of potatoes, with about 200 varieties being sold in the US.
How do you do the mushroom filling part of the bird nest? If you can, perhaps this could be a future video ☺️
