I’ve made this many times, and it’s fantastic. My architecture is a little different, though. From bottom to top, it’s bread, mayo, lettuce, tomato salt, pepper, bacon, egg, cheese, bread. I think the order matters for the taste and for the bread not getting too soggy from tomato. That said, sometimes I’ll put a bit more mayo and the tomato right on top. The mayo protects the bread somewhat, but let’s some juice through and the tomato and mayo blend nicely. When I do this, I make the tomato the top and the cheese the bottom, and everything else the same relative order. Also, I toast only one side of the bread by stacking them in the toaster oven so the inside is still soft, then I add the cheese to the soft side of one slice and melt it in the oven. This way, there isn’t so much toasted bread that it chews your mouth up. I also do this for regular BLT’s. It’s important!
Soooo good. When I first saw this on the movie my mouth watered and I wanted it sooo badly! Then I watched this special feature and made it myself and oh yum... it lived up to my expectations... such a good sandwich.

If he's a regional chef, where only people in the state of California know who he is, then nobody outside of that region will know his name. Hence the reason why Keller made an appearance here with Sandler.

@DTS19790601 I position the tomato in between the lettuce and mayo/bread so the egg never touches it and thus no mush. although I don't really think it matters as it's best eaten right after it's made anyway.
My son in law and I made this sandwich one freezing Ohio night. It's good. Late Night and cold beer. The movie is good ,light entertainment. No surprises here ,just relax.
Cover for 1 minute, then turn off heat. Leave cover on for another minute, then the egg is ready. Perfectly cooked with still a runny center, no need to flip it. Add the egg on the tomatoes, then break the egg (if you break the egg by cutting the sandwich in half with a knife, you just make a mess and lose a lot of the egg "sauce"). No need for the bacon either, which is unnecessary. Add the melted cheese slice on top and there you have it, a perfect sandwich.
I wonder if there is a video out there of the other sandwich that his daughter makes. It doesn't get quite as much coverage in the movie as this one, but I want to make it. If anyone knows, please tell me. This is a great sandwich btw. I knew it would be good, but it surprised me.

I eat prolly 300 sandwiches a year and I'll share with you what I think the best is: home oven roasted turkey, roasted red peppers, melted provalone, lettuce, tomato, toasted French roll with homemade walnut pesto! It's essentially a BLT on nice rustic bread with a fried egg and a slice of cheese. Nothing wrong with that I'd say it's a damn good tasty sandwich, but this dude is really over hyping it simply because Thomas Keller made it. Pretty sure there are literally hundreds of better sandwich's that this guy has never even heard about. The worlds a big place....
sure there are some bakeries that have some good stuff but you can't buy this bread at wallmart or any regular shop. to get good bread in states is a pain in the ass
hmm...my recipe is sorta lik this...but im vegetarian, and i messed with it a bit, here we go: 2 slices of toast, 2 slices of regular cheese, 4 slices of vegetarian stripples, 4 slices of pickles, butter lettuce ( as much as u lik ), some mayo. and at last not overeasy but fried egg, taste very good and salty,good day

It took Sandler quite a while to grasp the concept off alternating far and thin ends of bacon. He may not be the sharpest knife in the drawer..
