Waaaay less for raw meat. 4 hours at room temperature is enough to give you serious digestive issues and send you running to the bathroom or the hospital. Were you trying to defrost it or something? Always marinate meat in the refrigerator. Her recipe don’t even use an acid (lemon juice or vinegar) to help with the bacteria at room temperature.
