I often have avoided using Capture One because of its layout and was too lazy to figure out how to do what you just demonstrated. Thanks for saving me all of that effort; I will create my own workspace now and use Capture One more often! :0)
Auto hide is mac only. One feature I use is to take a bunch of "fancy" tools, and float them on my second monitor - so I have the mechanical tools - levels, exposure etc etc on my main screen and on my second monitor the color tools, presets and styles, sharpening, vignette etc all open. Then save that as a custom workspace, and every time C1 opens I'm raring to go. Another great thing for me is that being a left hander and a stylus and tablet user, having the panel on the LH side is really good.
The only challenge I have had is when using auto hide and then trying to crop on that same side of the image. To make it easier I crop from the opposite side of the image browser and then drag the crop over to the side of the image browser. I have a 2013 MacBook Pro.

Capture One is rather good, even though it has a steeper learning curve than Lightroom
And much steeper than Luminar
No, the win 10 hasn't got the hide the browser tab. Nor can you make the bars as small either.
Seems 'Variances' into toolbar also not avail in Windows.
