    Hi friends! Welcome to the first What I Ate Vegan WEEKEND EDITION in YEARS. Long overdue, weekend meals are often much more interesting because there's just more time to play around with plant-based recipes. In this weekend food diary, I share
    - sweet vegan breakfast smoothies that still fit into my plant-based low carb lifestyle,
    - a healthy vegetable-filled tofu recipe,
    - a sweet and spicy junk-food-made-healthier tofu recipe,
    - a high protein keto-friendly take on spicy garlic pasta inspired by @PastaGrammar, and
    - a sugar-free chocolate crunchy treat!
    Plus, I'm trying out a new air fryer with a GLASS basket. Ever heard of such a thing? I came across it when looking for a non-stick alternative, saw this one and bought it right away to try it out for you.
    These What I Eat In A Day videos are just to share ideas about the possibilities when eating a low carb vegan diet. They are not for telling you what you should eat. I hope you'll get some ideas and make them all your own! Thanks for watching!

    I've been making that Nashville tofu at least once a week for years now. I can eat an entire block of tofu in a single day when I make it, I just can't help myself. It's so good. I make it spicier and sweeter (I use the juice from pickled jalapenos and a bunch of cayenne and maple syrup for the sweetness) than the original recipe, but the method is gold!

    I put a cube of fermented tofu in risotto ( my brother said it reminds him of it after some vegetable side dish over rice). Just mashed it and fried it with the onions a little and after that the rice and cooked it like normal. Hits the parmesan note quite well. But as a warning 2 cubes turns it in to furu risotto.

    I'm shook by the glass basket air fryer! Most of them have non stick coating, which I want to get away from

      Yea!! Somehow I got the idea in my head that I wanted an non-nonstick air fryer and this is the best I could find. I can't say I 100% recommend it though. There are downsides for sure.

    1) Thank you for the cabbage slaw idea. I have cabbage in the fridge and usually only make cabbage foogath with it. I make BROCCOLI slaw all the time... But I apparently forgot that cabbage slaw is a thing. 🤣
    2) Mary, those nuggets. 😲 That's it, I have all the supplies, I have the equipment, and now I have the recipe goals, so I HAVE to make one of your soy-free tofus! Like, this weekend!
    3) You asked what we've been eating. The Dr. Praeger's brand makes some vegan ground "beef" that we like pretty well, so I brown that up in a big saute pan, then add chopped onion, garlic, hamburger seasoning, smoked paprika, onion powder, garlic powder, and whatever else smells good that day, let that cook for a few minutes, and then add a large quantity of two or three kinds of partially-steamed veggies. This week it was broccoli and zucchini, but cauliflower, potatoes, sweet potatoes, other squash, turnips, rutabaga, peppers, etc. are all great in here; it's really versatile. Then after that has sizzled on high for a few minutes, I take it off the heat and finish it off with a cup of melty vegan cheese(s), dish it and dress it with Sriracha. Is it beautiful? Rarely. Is it a bowl of heartwarming feels? Yep. And it's one way that my husband doesn't bat an eye at a veggie meal, so that's a win. 😄

    Fermented tofu is sooo good.
    But the different kinds taste quite differently. I like the stronger tasting ones.

      haha me too!! When I unboxed it and tested it without food I was really skeptical. But after using a few times, I am coming around. Having to use oven mitts is kinda a pain though tbh
      The noodles are 100% highly recommend :-)

    Hi Mary, your recipes are genius, I love your channel. Do any of the other tofu's that you make from legumes freeze like soy tofu, so they can be used in this way?

    Everything looks so good. The last recipe, "not pasta", I'd like to try. Chester is yummy too ❤. I had a vegan Reuben and it was so good. It was wheat meat, so I guess seitan. Thanks for sharing all these great recipes and tips.

    Do you make your own pickles
    I started making my own last summer ( and sauerkraut too ). Kosher dill pickles, pickled onions. A pickled mix of cauliflower, celery, carrots, and Jalapeños.
    I'll never buy pickles again.
    I recently discovered that the coriander seeds in the pickles taste great added to bean soup.

    The sauce from the Nashville hot chicken is good, i run out of pickle juice before i use up all the pickles. Do you make your own pickles? Do you use dill pickles with a lot of juice rather than relish?

    I need to try those noodles! Do they have a different texture from the shiratake (sp?) noodles? I did not find those pleasant.

      Totally different! Think of them as super pressed tofu sheets cut up into noodles

    What sweetener did you use in the recipe with the nappa cabbage slaw?

      I didn't use sweetener. Napa cabbage has a natural sweetness of its own that is enough so long as you don't add too much vinegar 😊

      @@robinwilson8435 oh sorry! I read your comment wrong. The sweetener I used in the Nashville Hot marinade was Lakanto Monkfruit (and erythritol) sweetener in the Golden variety.

    That pasta looked delicious
    I only ate on sat. Cause i have a cold, so i just was drinking hot eat all week🙄
    Felt well enough by Sat. So i made the biggest bowl ever of my bomb spaghetti 😎 and i was good for the rest of the weekend.
    Now im back to drinking hot tea, drying to get rid of this annoying, dry cough🙄

      @@ladeebug4650 definitely get it at t&t not Amazon! 👍 Then you can make sure the package is not crumpled. There are many kinds of Yuba when you get to the store. Sheets, sticks, knits, etc. Try a few! They are cheap and, like tofu, take on whatever flavour you apply to them. And since they are dry, you can store them a while.
