Garlic and spices are to be used in a particular amount depending on the amount of food and portion sizes per serving. So don't overuse and spices as it may lead to various complications eventually. -From an Indian who eats spices daily in curries and bhajis but in a particular ratio
1) you don't need to make a checkerboard, if you do half and half and cut it the same way you have the same product, 2) you don't have to layer it before you squish it into the pan
