  • Autumn is the perfect season to fire up the grill and cook a few steaks. In this episode, this is exactly what we are doing. We are making CILANTRO LIME MARINATED & GRILLED NEW YORK STRIP STEAKS. New York strip is great for grilling and best cooked using medium-high (or high, depending on grill) heat. Although New York strip does not need marinating, the simple ingredients in our cilantro lime marinade takes the taste of this steak to another level. So, heat your grill to medium-high (or high) heat and let's start grilling.

    • Cilantro Lime NEW YORK...
    CILANTRO LIME MARINATED & GRILLED NEW YORK STRIP STEAKS
    1 bunch of fresh cilantro, leaves and stems (about 2 cups, packed)
    zest of 1 lime
    juice of 2 limes
    8 - 10 cloves garlic, roughly chopped
    4 green onions, sliced
    1 jalapeno pepper, seeds removed (optional), minced
    1/2 - 3/4 tsp salt
    1/3 cup olive oil
    up to 4 New York strip steaks (1-inch thick), dried with paper towels
    1. Place cilantro, lime zest, lime juice, garlic, green onion, jalapeno pepper and salt into a food processor. Process on high speed, 30 seconds. Scrape sides of food processor with a plastic (or rubber) spatula. Process on high speed while slowly adding in oil, until smooth.
    2. Place 1/2 cup marinated into a container, cover with a lid and refrigerate until ready to use. You can serve this sauce later as a garnish to the grilled steaks or use it later as a marinade for fish or chicken. Poke holes into steaks, on both sides. Place steaks into a gallon-sized storage bag. Pour the remaining marinade into the bag, coating the steaks with it. Marinate in the refrigerator a maximum of 3 hours.
    3. One hour before serving, pull bag with steaks out of the refrigerator. After 30 minutes, preheat grill to medium-high (or high, depending on grill) heat, 375°F - 400°F. When grill reaches temperature, spray grate with nonstick grilling spray. Grill steaks, covered, 2 to 4 minutes per side. Remove from grill and tent steaks with foil, 5 minutes. Serve with reserved cilantro lime marinade (optional) and your choice of vegetables (also optional).
    To achieve a perfectly grilled marinated New York strip, marinade the meat for only a few hours. If marinated for too long the meat will become mushy. Also, make sure to pat the steaks dry with paper towels before coating steaks in the marinade. Finally, make sure to grill New York strip steaks over medium-high (or high) heat. If you follow these tips, you are sure to grill tender, juicy and flavorful steaks.
