    for the people with MSG sensitivities, you can skip it. the effect of soy sauce/salt/vinegar/sugar when combined is already very umami.
    (MSG adds a umami flavor to foods)

    Little hint to bring this to a whole new level. For most of the ingredients and spices with strong flavor for liangcai dishes, e.g. garlic, chili pepper, and such, leave it aside dry instead of mixing into the sauce. Pile those flavors on top of the dish after you mix all the other things, and pour a little bit of freshly heated oil onto it. Then do your final mix up. You just need maybe half a tablespoon oil or so to do the magic. Heat it up in a pan till it smokes, then scoop it with a spoon. That's it. Oh, another hint is, try some minced ginger with this method in the spinach dish - actually you can go fairly heavy for ginger here. You won't believe how good it is.

      We do. Italians have a LOT of cooked warm salads, just to mention the best cuisine in the world. But so do Germans and lots of other Norse people. The idea of salads with fresh vegetables is actually quite recent.

And honestly, there IS no such thing as "Italian cuisine", as if all Italy were one homogeneous mass that produced the same kind of cuisine. And son on and on. Just like China, you can Cantonese, Mandarin and what not cuisine. My bad for not properly conveying it with an emoticon or something.

      @Stirgid Lanathiel You might be right with the idea of raw kale, which is really something unheard of in any country were kale is eaten traditionally and not as fad bunny food.
      Other than that, raw salads are by far not exclusive to American cusinine. But you are right, we should appreciate the advantages of cooking for our health much more.

    just wanna say "liang cai" is more of an appetizer but not really to eat with heavier dishes :0 "liang cai" comes before the main entrees and usually don't mix together. but great video!

    I doubt I will be able to find those mushrooms "Sichuan Style Black Mu'er " any suggestions of what else I could try in place?

      It's also called 'wood ear fungus/mushroom' in English. You might be able to find it in Asian grocery stores since it's a very common Chinese ingredient. If you're looking for a similar texture to this, you can try jellyfish (but this is probably harder to find than the mushroom). However this dressing is commonly used in other salads like with fresh crunchy bean sprouts or sliced cucumber.

    Black fungus is toxic if you have hydrated it for too long (8 hours).
    Please notice this when preparing it.

      @BIGFOOOOOT no this is serious, the normal soaking time should be 3 - 4 hours.
      It loses texture after 6…
      Become toxic after 8.
      But it only applies to this one fungus/mushroom.

      By the way, never never mix it with your hand anymore in make Chinese liangban dishe, its looks really impolite, rude, unacceptable and disgusts, because it will produce potential healthy risk and not elegant.     OK please show us how to make the Sichuan cold beef and cow knee, or tendon, or pig ear, cold salad/appetizer with the cilantro, chili oil and peanuts, I can never quite get it right, but I can eat gallons of it. It goes so well with Korean cold noodles!

    What about smashed cucumber (拍黃瓜), the northeastern three-bit mix of cucumber, red onion and peanut (伴三丁), thousand-year egg with tofu (皮蛋豆腐), mouth-watering chicken (口水雞), or the ridiculously simple and surprisingly good sliced tomato with sugar?
