So since watching this a few weeks ago, I’ve substituted the beef for pork tenderloin. It was amazing. This week it was a meatloaf with crumbled blue cheese in the mix and a coating of crushed black peppercorns, served with peppercorn cream sauce. Again amazing. Thanks to the STCG crew for the inspiration!!!!
Dude...I will be cooking this for my daughter and her husband this Saturday night. She was born on the 15th of February. Her husband is excellent cook...no really, he is, and I will blow them away with this meal. I have done about 5-6 of your presentations on them and them always say...where did you get this recipe??? Pro tip: Put w/e in the egg batter first and then in the flower. The batter will always stick while the flower won't. And at the end of the day, it's still an egg/flower mix no matter which one went first on the product.

Put asparagus on a baking sheet, toss with olive oil and a half a dozen garlic cloves cut in half... Salt and pepper... Bake 400°F for 15 minutes or so... Awesome!... Breading more complicated!... Good luck!...

I got a KitchenAid range last year, it has dual ovens. A smaller top oven to heat a pizza or single casserole then the larger lower oven also has a convection function. It has been a total game changer & I love it!

Typically, I would order my steak prepared “Medium.” However, now (do to a health condition) I have to have all meats & fish cooked to the appropriate temperature, so I order/prepare my steaks Medium-Well. Hey Sam, nice easy recipe for valentines, my wife swears by Parisian essence, cream, brandy and pepper in her pepper sauce. (French heritage), she wasn’t a fan of the Dijon mustard and cleaning out the pan of all that goodness 😂
I always cook pork chops mashed potatoes and asparagus for Valentine's day for the wife. It's her favorite. I did the panko asparagus this year. Both of us loved it. Thanks Sam!
5:35....SAM... if you run a peeler over the bottom of the Asparagus the meat is tender and you can eat it all... just like the stems of broccoli.. it's wonderful and no need to waste any of it.
You should not pour brandy on the hot pan directly from the bottle. There is fire hasard there. Use a cup or something as transfer container. Nice video though.

I would love to see Sam take on the challenge of making some vegetarian or vegan dishes. Sam works hard to appreciate the cuts of meat he gets to work with. I think it would be fun to see Sam step out of his comfort zone and show the same level of effort for some vegan dishes. Maybe a once a month thing, doesn’t have to be all the time. Hello Sam! We just building our new terrace, and as i saw your videos. Those vids are THAT good that i get the urge to buy some appliances to make food there. OFF: I'm a very busy IT guy, who consumes a lot of meat, and loves nature. (We live next to a forest. If i have time, I split my own firewood with axes to heat our home - as a workout. I have a wife, a small daughter, 3 dogs, and a cat , so i' really dont have much time) ON: I' will mostly cook chicken on theese appliances on weekdays , it must be fast, and with a minimal hassle. On weekends, i'll have a few hours to cook four legged animals on those appliances... What do you think: A Hot plate or a big contact grill would be a better choice for start? I assume i should have some gas grill also at the start, to grill meats. The budget is very thin, as our terrace will be fckn expensive... I'm just looking for a cheap, good start, to cook on the terrace with my family. @Sam: Can you help me with some advice?

Literally called Pork au Poivre. But if you didn't add minced shallot to the pan before the brandy, you didn't actually make the proper sauce.

Steak au Poivre is one of the oldest standard French recipes in the books. Done properly, includes minced shallot in the sauce.
Pro tip:

Made this last night. Instead of the oven I put the steaks in my smoker to finish them. That combined with the sauce is a PU**Y MAGNET!!! thanks!

When covering the meat completely with pepper, the white and black pepper must be roasted first to become milder. Then you crush it.

We always used the fixins on the bottom of the cast iron, and just dried off the grease. No need to throw away flavor
