Throwing all those veggies on a dog is actually semi-nutritious. Whenever I get a cold cut turkey sub, I make sure to load it with plentiful veggies so that it's not all garbage and filling. I don't care for tomatoes though.
This brings back memories. Right after college I went to work for my dad. One of his business partners in Oklahoma City was from Chicago and hated he couldn't get real Chicago style dogs in Oklahoma. Eventually he got fed up and opened his own restaurant so every time dad and I would go to OK City, we would stop by and get one of these. It's a very fond memory.
Chicago dogs have grown fatter over the years. Back in the 1960s, a loaded dog had yellow mustard, bright green relish and chopped onions, that's all. The addition of tomatoes, chopped onions, a slice of dill pickle, sport peppers and celery salt have been added over the years. But, regardless of toppings, all Chicago dogs must have two things -- a genuine Vienna weiner AND a steamed poppyseed bun. And, of course, no ketchup.

Chicago style hot dogs are my favorite Hot dogs ever! I usually make them without the pickled pepper because my store never has them! But I make my dogs on the foreman grill to give them a nice sear which is how my kid likes it too! I add Coleman's mustard which is hot and has a kind of wasabi feel to it!
Ah, my hometown dog. Great job, Greg! I've made em at home many times. Even tho I live 30 miles west of Chicago, there's at least two joints within 5 miles I can grab one. Thank God, lol. Oh wanted to mention numerous Chicago hot dog establishments call them "Red Hots." You may have heard that before. If ya wanna go full OG Chicago-style hot dog meal, serve em w/ fresh-cut fries cooked twice in oil (first at a lower temp, and second at higher temp). I think it's becoming a lost art, but some old school joints still using this proper technique and still frying in beef tallow. (best). Wash it all down with a 'Green River' pop and there ya go! 😎🌭🍟
In the late 50's I went to DeVry Tech. in Chicago and had a dog every day from a vender near the school. He added chopped lettuce in his dogs. I do to this day, and it is excellent.
When I was attending FC’A’ School at the Great Lakes Naval Station in 1987, I had my first Chicago Dog before a Cubs game. I don’t remember that fluorescent green relish but a regular pickle relish. It wasn’t until 2003, I went to a Chicago Dog place in Toco Hills in Atlanta. They had the fluorescent green relish. Skip’s Chicago Dog in Avondale Estates has the best Chicago Dog in Atlanta.

Thanks Greg!!! - This brings me back to my days in Montreal - Where we got "Steamy Hot Dogs" at a roadside chip-truck in the '70s. My personal dressings were mustard, green relish, onion, and sauerkraut - what a delicious dog! We have access to "European wieners" at Costco in Canada, which I would think are the same as the "Vienna weiners" - very "snappy" skins Luckily I have a few in my freezer, so guess what I'm having one night this week? :) - I WILL add some celery salt as a post-dust - thanks for all the inspiration!

Every bite delicious and perfectly made yet often imitated but never duplicated for something so simple at any hot dog stand in Chicagoland. I've seen the Dietz & Watson name before but never had any of their products. I'm more a burger guy than hot dog lover but I've had my share of Chicago Hot Dogs over the years as a lifetime resident of the Chicago area. Your rendition certainly looks the part, that's for sure. I like the tip about cooking them slow so that they don't split. I have boiled them for decades! LOL I don't eat them often but once in a while such a treat can really hit the spot!
Vienna offers a kit with everything but onion,tomatoes,and pickle for 16 buns and dogs and all toppings for about $ 54 as of my last order... Cheaper than at my market for a mix of near but not genuine Vienna products. You can get skinless dogs too... It was delivered in less than 3 days in a big cooler with dogs frozen and with dry ice. PS. Try adding the celery salt to the water for cooking the dogs for how they do it in Chicago...
D&W hotdogs are excellent, no poppie seed buns near me or sport peppers. The relish can be made by adding a drop or 2 of food coloring to regular relish.
I love Chicago, love Chicago style hotdogs but I gotta have them my way. I have a grill and it cooks 10 times better than boiling. And I'm not a Vienna dog fan, much prefer Nathan's 1/4 lb dogs. Gotta have some onions on my dog. Everything else... I can do! And it's always GO CUBBIES!

Dietz&Watson natural casings are spot on. Since moving from Chicago to out east (PA), I found the D&W dogs to be the best in the east. Hard to find, but a very few stores stock sport peppers. Have to import peppers and relish from Vienna. Forget about finding poppy seed buns out east. Use potato rolls instead.
Deitz & Watson is good; we have a bunch here in Chicago, you get a pass because if distance, lol Casing type considering the circumstances is accurate with quality in all you did. Seriously though, regardless, you have done us justice Amigo.

Authentic Chicago hotdogs are steamed (not boiled) or grilled. Vienna hotdogs are definitely the preferred Chicago hotdog but Red Hots Chicago are also acceptable.

I had my first chicago dog at the age of 30 from a place called Lake Burger in Michigan. It was phenomenal. Honestly it was kindve life changing.

The trick to the whole recipe is finding sports peppers. I can come up with 1/4 pound all beef dogs, would like to find 1/3 all beef dogs too.
