  • What's wrong with regular kimchi? Well nothing is wrong with regular kimchi. We made this vegan kimchi recipe awhile back, when we sold it in our catering business, for people who were allergic to seafood and vegetarians. This way everyone gets some kimchi love, and plus sometimes its hard or expensive to get ingredients, like the salted fermented shrimps. So we have a special ingredient to replace that, and it is mushrooms, well mushroom powder to be exact.

    I’m vegetarian but heavily use vegan dishes and this is right up my alley! Thank you. Btw, do you know of any online shops that will ship dry goods in the U.S.? I’ve found Hmart does but only offers small containers of several ingredients. I’ll use them if need be but would welcome another source! I live in an Asian, Korean, Thai, Japanese or Indian!) market desert 😫 and need proper kimchi and chili paste not from the “Asian” aisle at my local Kroger.

      Amazon! They have an international foods dry goods section and a lot are 2 day ship. That’s what I use!

    Kimchi has various ingredients added to each region of Korea, so cabbage, cucumbers, and watermelon are sometimes added if I remember. By subdividing it into that, each house makes its own recipe, and it's endless.

    Napa or chinese cabbage is not readily available everywhere..I liked the recipe looks tasty.Red Korean chili powder..Can't wait to make & taste, just gotta figure out how how to get the right ingredients.Thanks
    P.S Cooked rice I had no idea sounds very traditional..
