Hello from Downtown Manhattan! For those interested Korin knives is owned by my master Vincent, (the glasses guy in background) I've been striving to become a master blade sharpener like him for many years and come into the shop for schooling a few times a month.
Most big UA-camrs dont know Korin and your big audience exposed to it now makes me so happy to see my masters life work and craft shown to millions. Thank you Max, and by a funny coincidence my name is Max too :p!!!
PS: while I love Korin, I must say as a professional sharpener even Vincent would agree Tokyo, Kyoto and Osaka have the best knife shops/makers in the world. Just our opinion ;D
I was trained in Tokyo to be a knife sharpener and now I train people in the United States the skills that I learned.

Been watching too many sword videos my guy, sorry, that isnt a hamon. What your looking at is a san mai, aka cladding steel, aka a sandwitch of different steels. Its extremely common in almost all japanese knives. Because japanese knives usually use high carbon that is very reactive and thus will rust fast for their cutting edge they tend to sandwich it between none corosive mettals that dont rust. The line is the exposure of the different metals. You see this in almost all japanese knives from the 100 dollar mark and upwards for larger knives which is cheap in the japanese knive world.
A hamon refers strictly to a different chatioency and colour in the steel due to the differnce in heat treatment caused by differential hardening. Which almost no kitchen knives have. There are likely less than half a dozen knive smiths in japan who still truely do this. I bet you less than 5% of those knives have a hamon.
And i will also bet you that any japanese knive shop that you will visit will have as high a persentage of san mai knives as this one.
Korin is an amazing shop, just down the street from me. And even if you're not in the market for an expensive Japanese knife, they can still help you. And they can also sharpen your knives if you don't have the gear at home to do so yourself.

Korin is incredible! I buy all my knives from them. I have one I haven’t sharpened in two years, just honed regularly, and it still cuts everything like butter.

Hasn't changed inside for like 20 years. Worked for Jean-George and used to have knife sharpening classes at our work by one of their masters. So cool, got some good deals too. Only buy my knives from them still

Fun fact. Knives don't kill zombies. The don't feel pain and their internal organs aren't used so damaging them wont do anything and knives can't penitrate the skull. Your best melee option is a hatchet. Sharp, crushes the skull, light, easy to master and requires 0 training to kill multiple zombies with and at home Depot and any hardware store, even Walmart. Not to mention the utility over a knife, cut firewood, build shelter, make a spear with it, if it's stainless steel you can use it as a mirror to reflect sunlight to signal aircraft to your position without signaling anyone or anything else.

@@heavenbangun9933 common sense, nobody died from being stabbed in the head. They train for soft areas like the torso. Secondly just go to home Depot and just pick up a hatches, no need to buy, just pick it up, you'll see that it's light but heavy where it counts, and you can swing it alot without tireing, even if your fat as fuck, thirdly it's best to use a mirror to direct sunlight to aircraft, using fire, a flashlight, a flare or even a radio signals your position to every living and nonliving thing in a mile radius or more. You do not want that. A mirror directs light in a very procise area and only the pilot/crew can see it and can mark your location for rescue my the national guard/army/marines/FEMA. Or if they're in a Helo, that can land and extract you. Also, hatchets are cheap, easy to find, and easy to maintain, just keep dry and in a sheath/cover. Don't even really need to sharpen it. Doesn't have to be sharp to spit skulls and wood.

Honestly I whenever my dad’s not around I like to mess around with his sushi knives bc they have scabbard part as well as they’re pretty long, sharp, and pointy. I got my own unagiba but it’s relatively inexpensive and doesn’t have the wood scabbards, compared to my dad’s :P

I visited a knife shop in Kouchi, Japan and let me say. Japanese knives are amazingly high quality and well sharpened and made. It’s an art the Japanese have perfected over the centuries

This is a traditional knife which is basically wooden base with a big static knife, in our language we call it "Boti". In other states of India it goes by many names such as Vili, Pahsul, Polad, Aruvamanai, e.t.c. This thing is a tool which you should must have in kitchen, With enough skill and experience with it can slice the hardest food items, peeling veggies, cutting any fish, fruits or maybe finest chops of any veggies.
