We love knives, never used these, but will try them. We use Victorinox, Dexter Russel, Mundial, and have a few cheaper ones around, for us its important to have that NSF stamp on the knife.
I have a few coldsteel knives I like them all but none of them are kitchen knives. I have been use my master hunter vg1 for my kitchen knife it cuts amazing
Excellent points, Joe! Good knives aren't accessories. They're absolutely vital for any serious cook. And yet they're completely missing in more kitchens than you could begin to count. My own arsenal is actually fairly small, and tuned to my needs, but it includes carefully selected French, German, Swiss, and Japanese knives, and even an antique Canadian butcher knife I got from my Grandfather that's probably a century old. It, and all of my other knives, are sharp enough you can shave with them, because I have a good steel and a set of Arkansas stones, and I know how to use them. I totally hate dull knives, and you won't find one in my kitchen. Aside from the fact that they're annoying, I consider dull knives dangerous.

I have a Forschner / Victorinox slicing knife and a Victorinox steel, and they're both superb. The slicing knife is the best I've ever had my hands on.

A LoL. 4U My G/pa used 2 process a lot of animals. His ole SayN Was "Leav e it to Clever" 2 git it done quik like he used Chicago cultery b4 it got cheaped out ! Sadly I was a GI When He passed I was OC duty. Got home weeks later & No collectibles of His left cept 4 a broken pipe nobody wanted cept 4me,& a b roken pipe knife . !

Thanks for watching, I usally take all my knives to a local guy who sharpens them for me , but I will have to look into some sharpeners for you

I am a meat cutter by trade, it's a whole bone in pork leg it weighs 19 pound shank and all
i have never tried a whole 19-20lb pork leg but i have done a whole hog
