    How To Make Hungarian Chicken Paprikash
    2-3 tbsp olive oil
    3-4 tbsp salted butter
    9 chicken drumsticks (or chicken pieces)
    1 brown onion, finely diced
    3 crushed garlic cloves
    1/2 tsp black pepper
    4 tbsp hungarian paprika
    1 can diced tomatoes (400g)
    2 cups chicken stock
    1 cup sour cream
    1/4 cup cream
    3 tbsp plain flour
    Garnish with fresh parsley

    You forgot to add peppers (capsicum that is). 2 bell peppers diced will probably do. Also, don't throw the sour cream mixture in like that, it'll precipitate out leaving unwelcome lumps behind. Temper it first by mixing a little portion of the boiling sauce into it, then pour the whole thing back in. Your sauce looks quite runny for some reason. It might be because you didn't add enough of the sour cream mixture or some other mistake. Hard to tell from here. The right consistency should neatly cover the back of a spoon on contact. I believe you are adding way too much stock up front. Run it low and add more as water boils away.
    I'd also add a teaspoon or two of ground caraway seeds and maybe a little more garlic.
    On the other hand, great start!

    Paprikash doesn't typically use tomatoes. You could add a bit of sweet pimento paste though.

    That can of diced tomatos looks amazing. In the U.S., our diced tomatos are packed in juice. I will need to look around for some imported Italian stuff.

    Thank you for this. I just followed your tutorial and my first attempt turned out better than the chicken paprikash that I tried at a famous restaurant in Budapest, maybe it's because I used hot paprika and they used sweet paprika. This dish definitely taste better spicy!

    Now a good paprika is needed to do this, which is not easy to find outside Hungary.

    Traditionally we add one to two fresh chopped capsicum at the same time as you add the tomatoes.

    just tried it. are you supposed to let the sauce cool off before adding the sourcream mix? lots of clumps! also, gave it a taste test and it tastes bland and kinda bad. is that how its supposed to taste??

      You have to use good quality full fat sourcream. Otherwise it will separate and be clumpy

    This can be a bit bland for my taste--or my taste buds are deadened, but I've been using a jar of salsa rather than tomatoes. I need the extra kick.

    you put the sour cream into early ,you have to wait until it cools a little so it doesn’t curdle and you forgot the peppers and carrots

    Oil and butter? Right off the bat you're swapping out stuff. Any Hungarian grandma worth her salt, will tell you that it has to be lard.

      And quite a bunch of others will tell you it has to be duck fat and they'd be right. You can call the oil-version light or lazy or whatever. Still works okay.
