    Oil Down is made by slow cooking breadfruit, green bananas, carrots, dumplings, taro leaves, salted pork/salted beef/chicken, in coconut milk seasoned with turmeric, garlic, thyme, green onions, bell peppers and other green seasoning. Sometimes - and I highly recommend it - a bit of curry powder is also added. Add salt to taste - although sometimes you may not need to add much or any at all depending on how salty your added meat is. And here's a little secret to make your oil down taste extra special: add a little bit of brown sugar to the milk. Don't make it sweet! Just the tiniest amount necessary to give a slight hint of sweetness. It give it that Je ne se quoi flavor that you know is good but can't quite put your taste buds on to figure it out. Takes about 45 minutes to cook once it starts bubbling. Oil down tastes best after it has sat in the fridge over night and warmed up the next day. It tastes great fresh off the stove. But it tastes even better as a warmed up, left-over food. Something about sitting in the fridge overnight and being warmed up the next day, just brings out the coconut flavor more.
