My opinion as someone who has rats: In regards to ease of taming, it's not just their past that contributes, but genetics too. A rat that bites will always bite. A shy rat will always be skittish, however you can tame it to become calm around you. But if something very frightening were to happen in your house (shouting, thunder storm, loud dog barking, something fell down hard near their cage, etc) then they'll revert to being skittish and fear you. A well bred rat from a breeder will never have any of these issues, and will be tame from day one. Food requirement is a one paw from me, because they can live off of 90% on a lab block diet, some say 100% even without needing a single supplement. Giving them small left over scraps of fresh food me and my bf couldn't finish isn't a big deal, and mixing a tiny bit of generic rat mix foods from the pet shop alongside their lab block is simple and makes them enjoy different flavors from time to time. Space requirement isn't that drastic if you only get 2 or 3 rats. It's only a huge cage if you plan to get 4. Daily care routine isn't that hard. I got a giant cage suitable for 6 rats, and it only takes me 23 minutes to wash the whole thing, put bedding in, put platforms and toys back, etc. I was slow at first but you get fast over time. Of note, I do arm weight training and am basically living like a house wife for my bf, so that might also add to why I'm so fast with cleaning their cage.
