  • hello everyone! It’s been a while since I made a side dish video!
    I made 8 Korean side dishes very easily and simply.

    📌 Gaji-muchim(Eggplant side dish)
    Ingredients: 3 eggplants (500g), green onions (10g), 1/2tsp Korean seasoning salt(maht-sohguhm), 1Tbsp sesame seeds, 1Tbsp sesame oil, 1Tbsp minced garlic
    Tip) Steam or boil the eggplants depending on the desired texture. If you want a firmer texture, steaming is better. And if you use Korean seasoning salt(maht-sohguhm), you can make a better-tasting side dish.
    📌 Gaji-jeon(Eggplant pancake)
    Ingredients: 2 eggplants, 3Tbsp flour, 2 eggs, 3 pinches of salt, cooking oil
    Tip) Eggplant pancakes are delicious when eaten with soy sauce. Make the seasoning mild considering that you will be dipping it in soy sauce seasoning (how to make soy sauce seasoning: 1 T soy sauce, 1/2 T sesame oil, 1/2 t red pepper powder, a little vinegar depending on your taste).
    📌 Cheonggyeongchae-muchim(Bok choy side dish)
    Ingredients: 6 bok choy, 1Tbsp of salt (used when blanching bok choy), 6 pinches of Korean seasoning salt(maht-sohguhm), 1tsp of sesame seeds, 1tsp of minced garlic, 1tsp of sesame oil,
    Tip) When squeezing out the water from the bok choy, if you squeeze too much, it won't taste good, and you can enjoy moist bok choy by leaving just the right amount of moisture!
    📌 Cheonggyeongchae-kimchi(Bok choy kimchi)
    Ingredients: 6 bok choy, 1/2Tbdp salt (for pickling), 3 green onions (15g), 1/2 onion (100g), 1/3 carrot (50g), 2.5Tbsp anchovy fish sauce(aekjeot), 2.5Tbsp korean hot pepper flakes, 1Tbsp sugar, 1Tbsp minced garlic
    📌 OI-kimchi(Cucumber Kimchi)
    Ingredients: 2 cucumbers, 1/2 tbsp salt (for pickling), 1 tbsp oligo syrup (for pickling), 5 green onions (20g), 1/2 onion (100g), 1/3 carrot (50g), korean hot pepper flakes 2.5Tbsp, 2.5Tbsp anchovy sauce, 1Tbsp sugar, 1Tbsp minced garlic
    Tip) If oligo syrup are added when pickling cucumbers, the texture of the cucumbers becomes a little more chewy. If you don't like sugar, just pickle it with salt!
    📌 Pickled-cucumber
    Ingredients: 1 cucumber, 1/2 tsp salt, 1 tbsp sugar, 2 tbsp apple vinegar, 1/2 lemon, 200ml Zero sprite (pour enough to cover)
    📌 Sundubu-jang(Soft tofu topped with seasoning)
    Ingredients: 1 sundubu(350g), 2 green onions, 2 tbsp soy sauce, 1 tbsp sesame oil, 1 tbsp sesame seeds
    📌 Sundubu-gyeranjjim(Steamed egg with soft tofu)
    Ingredients: 1/2 sundubu, 1 green onion, 3 eggs, 3Tbsp water (if you want a more pudding-like texture, add 50ml of water per egg. If the water increases, add more salt), 6 pinches of flavored salt. , 1 teaspoon sesame seeds, 1 teaspoon sesame oil
    Tip) When cooking steamed egg in the microwave, take it out for 5 minutes and if it is not cooked, add 30 seconds at a time and check the doneness of the steamed egg!
    * Frequently asked question: How long can side dishes be stored?
    After making the side dish, let it cool and store it in the refrigerator. If you eat it with chopsticks or tongs without saliva each time you eat it, it can last longer. I usually eat it for 3-4 days, up to a week, and for kimchi, I tend to eat it for up to a month.

    Too bad I cant eat eggplant... I guy I will just try bokchoy and tofu
