This is such an inspiration. Although I don’t eat meat or have a canner, I have been learning about water bathing and having a go at that for the last couple of years. Hubby bought me an Amish canning/water preserve cook book. Really recommend it. Looking forward to learning more from your channel 😊

Pressure canning is not nearly as much of a sanitary hassle as people make it out to be. And you only need jars and an oven to do it. If you have a Sous Vide and a big styrofoam box you get better results with things that require fairly accurate temperature control, but if all you need is a way to preserve "meal jars" the oven will do the trick just fine.
Brilliant, I’m always envious of your pressure canning! I should have asked for a pressure canner for Xmas! I keep looking at my freezer thinking once the pigs are done and in there won’t be any space for the lambs 😂 x
Honestly, you don't need anything other then pressure relieving jars and an oven. And if you don't tell anyone then just screwing the lids on very loosely, and using mitts to tighten them as soon as you take them out of the oven, regular screw lid jars work perfectly fine too. Though they are hard to open once cooled. 1) Stuff whatever you want to preserve into the jars. 2) Make sure the edges of the jars are squeaky clean so you get a perfect seal. 3) Put them in the oven at 125C/260F, with the convection fan on, for 3 hours or longer. 4) Check that you see bubbling in the jar for at least 1 hour. 5) Store out of direct sunlight and preferably in a reasonably temperature stable place. This is how canned food is made...
Excellent as always Tracy. We’ll definitely have a go at making some scotch broth for the coming winter. I’d love to have more meals in a jar in our pantry but haven’t done much yet. Im also looking forward to your pro plus canning series. Most youtuber canners are American and do stupid numbers at a time. We just don't have that kind of storage space in the Uk. Thanks
Great Video as always Tracey! I wanted to mention to you that I bought a soup machine that you used on a recent video! WOW! What a game changer! There is a "fast food" place here in the States called Panera Bread that has the most fantastic Creamy Tomato soup! I found the copycat recipe for it and that was my first soup in the Soup Machine! Thank you for that video because it changed the course of this Homestead! I'm making some tonight for dinner with a sandwich on the side! I can grow all of the ingredients for that one! I'm so excited to be able to produce the vegetables in the garden for these meals! Now to start planning out the huge garden for next season!! *giggle* Btw, HI CHRIS!! **Waving** from the U.S.A.

Really like your videos about all aspects of working and living on a smallholding. Watched with interest today about pressure canning with the instapot. I'm concerned that the instapot is not suitable for pressure canning, many sources confirm that instapot (even those with a canning function) are not safe as pressure canners, but may be used for water bath canning. Just worried many folk may try this with the instapot, waste their food, or worse possibly end up pretty ill.
Ahhh thank you. I used to feel the same until I did my own research for the pro plus model versus what’s needed for our altitude. You can always test to see temp and psi if concerned. Everyone must get their own comfort tho. As with anything, be it fermenting, canning or cooking in general, don’t rely on other people’s comments :) thanks for being here and commenting yourself 👌

The two piece kilner style mason jars were something I invested in a couple of years ago as they were going for a good deal on eBay so I bought a new batch every month for the year. I now tend to sway towards the lug lid panelled jars which are from a website called jars and bottles I think l.

Could please tell me where you get your jars from ? As at the minute I’m buying a few here and there online but I’ve found most say they can’t be pressure canned or they are really expensive
We have been canning for 5 years and 😢 use a canner designed for the job. We use a 23 quart presto canner which can hold 16 pint ( 500 ml) jars stacked or 7 quart jars

This week we canned tomato puree from 10kg og paste tomatoes bought at our local market in the summer sived and frozen till now when the log oven is on and it's cheap to reduce the pulp. Love your vidios were both from farming families
I've been canning 50 years and I have LOVED the addition of the electric canners. just a wider array of tools. I don't always have time to do full canners or to babysit it and I don't always want large batches of everything.
