Chopped tomatoes, on the other hand, are often made from a blend of different types of tomatoes and sometimes contain more water, making them thinner and less flavorful by comparison. Adam is a guru !

Found your channel yesterday and cooked this for hubby as a surprise. Iam American, he is British. Normally we eat American style meals as that is what I grew up making from scratch. But he has has a long stressful week at work so figured he could do with some comfort food. I followed your recipe as a guide line for the basic flavours, but as I had things needing to be used up, I added some cannellini beans, some baby turnip (called swede down south in England), as well as a little bit of truffle salami from a stick bought at the farmers market a couple weeks ago, sliced it about a cm thick then cut in half. I cooked that with thr sausage and added at the same time the sausages went in. Normally I follow a new recipe exactly just so I know what it was meant to taste like, but figures those ingredients wouldn’t be bad with it. Hubs was dubious about the salami in it but decided he did like it. I showed him your channel and we will be making it your way next time and just have the extra veg on the side. Everywhere I had looked for a sausage casserole recipe had the potatoes sliced and added to the top, with the browned sausages going in the oven the whole time which I thought would be far too long, your method made far more sense. So the spuds were added in the casserole instead of on top. Hubs told me that was a hot pot hacking the spud slices layered along the top 🤷🏻♀. Regardless, I thought even with my additions that it came out quite tasty and it made Hub’s day that I cooked him an Americanised sausage casserole lol. Thanks for sharing! And for showing that blue language in the kitchen is perfectly acceptable when something goes tits up! 😉 I have enjoyed your video, the recipe as well as your laid back style! I loved that you did not spend 10 minutes showing how to peel a potato as so many seem to do. If you can’t peel a potato and need detailed instructions, you should put it down, pick up the phone and call her mum to bring dinner or call for pizza as you are not ready to try cooking a meal until you have mastered the very basic of peeling a potato. 😈🤣 Just your comment on the peeling of the spuds had me hitting the subscribe button. I keep using your sausage casserole as my starting point and add other things, like parsnips, swede, sweet potatoes, and sometimes I do dumplings and different herbs, and bay leaves (I grow all those myself) Sometimes Worcestershire sauce or balsamic vinegar, depending how I feel. It always turns out brilliant. Thanks for your recipes and videos, Adam ❤
Hey Adam, There are a couple of reasons whole tomatoes will taste better than chopped (including quality of produce) but the main one is that chopped tomatoes have firming agent added (usually calcium chloride) Chopped tomatoes need this or else they will break down when pasteurised during the canning process However, chopped tomatoes are useful when you want those chunks to remain through a longer stewing process
I cooked a sausage casserole this week I put a tin of green lentils in too (as they had been in the cupboard for a couple of years ) what a fantastic addition I used Cumberland sausage from the butcher as I live in Cumbria not those imitations ones from the supermarket 😎😎😎

Australia Saturday 29th 6.30pm...Hi Adam...made this for tea today...absolutely scrumptious...it was everything I thought it would be like and taste...it is definitely going on our "make it again" list...and now I won't have to resort to boxed sausage hot pot with goodness knows what in the seasoning packet...yeah just loved this meal of yours...I didn't make it with wine just water as you said and I cooked it in olive oil not lard and I just used organic diced tomatoes yet still it turned out thick like a hotpot...so impressed can't wait for our winter to fully kick in so I can make this on a dark; cold & rainy night...try it everyone it's as good as Adam is saying
I haven't any lard, but I do have both "vegan ghee" (coconut oil & some other oil, and it really does taste buttery despite the lack of dairy) and a cheap olive oil blend (mostly sunflower oil, I think). I assume those would work too? It sounds like the main thing which "levels up" the sausage casserole is NOT putting the sausages in with the other ingredients straight away, so they don't overcook and get mushy. I see that you don't slice the sausages into chunks before adding them to the casserole, either; that probably also helps prevent overcooking, and each diner can easily slice up their portion of the sausage while they eat.

Unfortunately I've just been diagnosed with acute pancreatitis so almost a 0% fat, 0% processed meats, brown foods diet😢 so won't be able to recreate this but it does look banging nom nom. Fabulous tips there Adam. You're absolutely right about the sausages going soft when overcooked. Squeezing plum tomatoes reminds or the lyrics to a Led Zeppelin song. I prefer to use canned Cherry tomatoes. Without too much vigorous stirring during cooking, they hold their shape rather well. I've saved this video's recipe to my cooking library. I love sausage casserole. I stick some pre-fried cooking bacon in mine at the carrot/potato stage, and a teaspoon of smoked paprika. Completely agree about putting the sausages in at the end. This is also a banging slow-cooker recipe 😊.

The crappy tomatoes get used for the tins of chopped, and the good ones get saved for tins of whole plum ones. We never buy tinned chopped tomatoes, just mash up the whole ones.
Great recipe Adam and very comforting for spring too. I wonder what you think of my recipe? Like you I brown my sausages and add them for the last 30 minutes of cooking but when I use a pork meat I sometimes add a few crushed fennel seeds for my casserole with a little dried sage. To my veg I add large chunks of apple as pork loves apples and I deglazed with sherry or vermouth before adding the tomatoes. I like my casserole to have a nice unami flavour so I make my own seaweed seasoning by crushing dried nori sheets ( you can get them in Lidl really cheap) with rock salt. I also add a few dried mushrooms in there liquor. Tasty 🎉
I always coat the sausages in a little oil, paprika, pepper and whatever dried herbs I have to hand and let them sit for a while in the fridge while I prepare the veg etc. Imparts a lovely flavour to them. If I'm in a hurry Colmans does a decent sausage casserole mix too.
I always buy whole plum tomatoes over chopped. I think its something to do with the best grade tomatoes being kept for the whole ones and the lesser quality ones are used for chopped tomatoes

Won me again ol' mate. Back in the day I worked a couple of months in a Cannery, won't say which one. Well they used to separate tomatoes in big bins...some were Green, some were Ripe, Some were over-ripe (pretty messy). Green were stored, Ripe was Canned Whole, and Over-ripe were used in Canned diced, the rest was Sauce. That could possibly explain the taste diference. Cheers mate.

The only way to level this dish up is to use sanmarzano tomatoes. and maybe a little splash of worcester sauce to zing up that wonderful gravy.

Looks amazing! One thing I would change is trade the table salt for a good salt like sea salt or Himalayan salt.

This is pretty much how I make mine only I add Worcestershire sauce mate, should try its not the same without it

Yum! I like the fact the sauce is done first as I’m a vegetarian and husband isn’t so I could do this dish for both of us 😅
You could also use veggie sausages or Glamorgan sausage

I always buy whole plum tomatoes over chopped. I think its something to do with the best grade tomatoes being kept for the whole ones and the lesser quality ones are used for chopped tomatoes

Won me again ol' mate. Back in the day I worked a couple of months in a Cannery, won't say which one. Well they used to separate tomatoes in big bins...some were Green, some were Ripe, Some were over-ripe (pretty messy). Green were stored, Ripe was Canned Whole, and Over-ripe were used in Canned diced, the rest was Sauce. That could possibly explain the taste diference. Cheers mate.
