    Here is the recipe:
    $100 chili recipe
    3 chopped onions
3 diced bell peppers (green, yellow and red)
2 large cans of puree (28 oz)
2 large cans of diced tomatoes (28 oz)
2 large cans of crushed tomatoes (28 oz)
2 large cans of tomato sauce (28 oz)
4 15oz cans of stewed tomatoes
2 15oz cans of light red kidney beans
2 15oz cans of dark red kidney beans
2 15oz cans of great northern beans
2 15oz cans of black beans
2 lbs white whole mushrooms quartered
    2 lbs breakfast pork mild
    1 lb breakfast pork hot
    3 heads of garlic
2 large jalapeños (leave out if you don’t want head. Add 1 if you want mild)
    2 stalks of celery
    1/2 thick cut bacon
    3 pounds ground beef (80%lean)
    2 tablespoons of Worcestershire Sauce
1 block of cheddar cheese sharp shredded
5 heaping tablespoons of chili powder
    3 heaping tablespoons of salt
4 heaping tablespoons of black pepper
4 heaping tablespoons of granulated garlic
    2 heaping tablespoons of oregano
1 heaping tablespoons of cumin (I liked to use 2 tablespoons)
-brown all the breakfast pork in a skillet. When it’s halfway cooked add 1/3 the onion, pepper, celery and garlic. When done drain the mixture of grease, then add to the big chili pot.
-in the same skillet brown all the bacon. When it’s halfway cooked add 1/3 the onion, pepper, celery and garlic. When done drain the mixture of grease, then add to the big chili pot.
-in the same skillet brown all the ground beef. When it’s halfway cooked add 1/3 the onion, pepper, celery and garlic. Also, add all the jalapeños and Worcestershire sauce.
-When beef mixture is almost cooked, add 1/2 your mushrooms to the skillet then cover for 5 minutes. When done drain the mixture of grease, then add to the big chili pot.
    - deglaze the skillet with a cup of red wind. (merlot if possible) then pour into big chili pot
-drain and rinse all your beans and dump into big chili pot.
-add all the cans of tomatoes in. Add 3 full 28oz cans of water. Do not stir until all cans and water have been pour into big chili pot.
-now gently stir so you don’t smash the beans.
-bring to a boil then lower flame for a simmer.
-add the rest of the mushrooms to the top of the chili. Do not stir them in.
-simmer covered for 3 hours. When the mushrooms on top have sunk into the chili, then your done.

Just an update. I made this Chile today. I had some family over to help eat it. I froze the leftovers for later. The Chile was excellent. The only changes from the recipe were, a little less mushrooms, I added them at the first, but didn't add the second half. And just other things I did a bit different, mostly cooking techniques. But for the most part it was certainly good.

+Joshua Maxwell He obviously was talking about the heat from the peppers...
He said that he only use one jalapeno because he can't handle the heat, but if you want it hot you should use two jalapenos and if you are serving it to kids you shouldn't use any jalapenos.
If the difference of a jalapeno makes it so that it's either too hot or mild enough for kids then it really can't be hot at all. Jalapenos are not even hot..

Just use a pound of ground sausage and a pound of ground chuck. Drained. A big jar of Salsa(mild), a can of Rotel tomatoes with chilis, and a can of tomato paste. Season again then drain and add your beans. Why make life complicated?

Fry your onions and peppers off first with your chilli powder; You'll get no flavour out of them if you just dump them in like this. And brown your meat for longer! Also, not American but I'm pretty sure beans and red wine don't belong in chilli.

    • @james64468
      @james64468 8 років тому +1

+Bobble86 Yeah as an American I don't consider this as a traditional Chili. I just brown off the meat and put the meat into a bigger pot. I don't add pepper or onions. I just do onion powder and chili powder. Kidney beans and black beans and simmer it together. If I am lazy I go and use the crock pot.

    • @raiderrob672
      @raiderrob672 8 років тому

+Bobble86 Yea, not really sure what that is but it ain't chile. there are some chilies that have beans but real Texas chili has no beans and certainly no wine or tomato's of any kind. WTF with the mushrooms? I think this is kind of a Chicago style spaghetti sauce or something.

Drain the bacon grease???!?!. Let's be honest here. Nobody eating this chili is too concerned about their health. It has 6 pounds of meat for Christ sake. Bacon fat=flavor.

    Love the $100 title.
"2 large jalapeños (leave out if you don’t want"... it looks like one large pepper would do, but, that is a lot of food.

Well that look great. I also use sausage and ground meat in my chili. Like John I not only drain my meat but also press it in the cullender to get all the grease out. There are some interesting combination John has there I will have to try. Thanks for the video.
