    It excites me enormously that there’s someone out there encouraging people to cook and create food from scratch..it tastes so much better, and is so much better for us than all this store bought stuff, that’s full of preservatives and chemicals.. and just think..when you can make all these things from scratch, if there’s ever a down time in our world and store bought’s are not available, you won’t ever have to do without! Because you can make your own... thank you Jess, for all that you encourage and share.

    Thanks for posting this! I've had so many people tell me "you should make your own mayo, it's so easy!" but they often seem to be really judgemental about it and nobody ever takes the time to walk me through the process beyond. It's a hole in my cooking skills because my mom doesn't make it, so she never taught me, and looking it up just hasn't been a priority.

    😍🌻 I add my own fresh frozen (frozen in 1 t cubes in the ice tray and then thawed) lemon juice, a teaspoon of ACV, a hearty squirt of Sriracha sauce and a teaspoon plus of some yogurt whey for preservative and my mayo keeps for a month in the fridge!

    your a saint! I cannot tell you how much oil I've wasted over the last 11 years trying to make mayo. Every video I watched over the years said to drizzle the oil in slowly, so I did...and nothing. your video is the first one I've ever seen instructing me to put everything together. I was so excited when it worked!!! Thank you 😁

    I've been doing this for a couple of years. It's a great recipe. If I'm using it for fish, I add more lemon juice. If I'm using it for chicken, I add a bit of fresh basil. There's so many things you can do.

    I use avocado oil and instead of lemon I use Apple Cider Vinegar. I do use dijon mustard. I also make mayo in my regular blender instead of using an immersion blender, just so that folks know that's an option in case they don't have an immersion blender..

    I had NO IDEA an over easy egg was the same as eating a raw egg!!

    Growing up, we only had homemade mayo. I hated it. Now, as an older adult, I appreciate what my mother did. Thank you for sharing!

    The lemon helps make the raw egg safe. Some use vinegar, which has the same effect on the raw egg.
    As far as adding raw garlic, I've read that if using in a home made salad dressing, you want to use it within a week or so.

    First time I had it was in Spain. Just about anywhere you ate in Spain the mayo was made fresh. Not your recipe but a variation of it learned at Momma's knee!

    This recipe saved my dinner! I’m so glad I remembered it. I needed mayo for my casserole, but didn’t have enough, so Jess to the rescue! The oil I had on hand probably wasn’t the best choice, but it worked and you couldn’t tell once the mayonnaise was mixed with the other casserole ingredients. Thanks!

    When I was very young (in the 80s) I was taught to do allioli (emulsion and garlic) in Spain. The original recipy took FOREVER and included a lot of stering clockwise and one drop of oil at a time and even a bit of moon-gazing ( :-O). A still see good chefs on TV doing that ond-drop-thing. BUT my cousin is quite clever and used that blender you have and could make it in less than 30 seconds. That made the old spanish ladys mumble witchcraft, I tell you! :-D We put in the peppar, the egg and the garlic and just poor on the oil whilst running the blender. However - one of my newer blender cannot do this, the blade is to sharp. VERY important, it has to blend, not cut. So I keep one or to old ones for this.
    And onother trick - the oil and the egg has to have the same temp, or it will crack. If that happens, you just take one more egg and use the cracked emulsion as "oil", and is usually gets emulsified.
    The point with this ramlbing though, is that allioli is my absolute favorite sause to grilled anything. Chicken, pork, veggies, ANYTHING. With fried potatoes it is PURE HEAVEN. Try it!

    I forgot that I was going to make mayo when we used the last of ours and I bought a new jar. That jar of mayo will last us for months. But next time, I will make my own. Thanks for the easy and clear recipe. One more reason I "need" an immersion blender.

    My favorite quick sauce is mayo,with lemon juice, & most of the time I add a curry blend.
    Still haven't made my own mayo though. I've known how for decades,but still haven't made my own yet. I forget & buy a jar of Hellman's, then add lemon & curry powder to have on veggies, sometimes when I make tuna salad sandwiches, always when I pan sear a salmon filet, or on some egg dishes, like sliced hard boiled eggs on asparagus on toast, in an egg salad sandwich, some kinds of quiche, fritatta, or maybe crepes with veggies & chicken in a creamy sauce, but I forget how much I love them, so never do. It's been many years.
    Funny, this showed up on my phone this morning & I'm going grocery shopping today.
    I think I'll be making crepes with mushrooms, spinach, caramelized red onion, Swiss cheese & pour some of that lemon curry sauce over it.
    I'm going to see if I have the right size Mason jars, but your's looks like the perfect shape.

    I use vinegar instead of lemon juice. But the immersion blender, I am going to have to give that a try!

    This is awesome!!! We are strictly Hellman’s people but my youngest daughter is allergic to soy so we buy another of their varieties that doesn’t have soy. It’s EXPENSIVE 😑 So I can’t wait to try this recipe. Thanks for sharing!!

    Oh my word, that was stupifyingly easy. I tried making mayo from a recipe that called for larger quantities of ingredients and it completely bombed so I never tried it again because I wasted good eggs and oil. I'll try again using your recipe. Thanks Jess!

    Just wanted to share - the Nourishing Traditions cookbook has a recipe for lacto-fermented mayo. Basically you make the mayo, add a little yogurt whey, and let it sit at room temperature for six or seven hours, then it's stable in the fridge for months! I also made it when I only had extra virgin olive oil on hand, and the fermenting process really mellowed the bitterness.

    The kind of acid doesn't affect whether it emulsifies, that's the job of the mustard and egg yolk. It works fine to use none, but tastes better with it, or you can use vinegar. I like it best with a garlic clove blended in. Chipotle in adobe is awesome too.

    That is so much better than how I was taught. I was told you have to SLOWLY drizzle the oil in while blending. It took forever and your arm was aching. I am going to do it your way from now on!

    I have made my own mayonnaise for a while but because I made it in a blender, the clean up is terrible. I love mayonnaise but have done with out for a month. I made it tonight in the jar, how wonderful . Thank you , thank you, thank you . God bless Deborah
