Because Sonic and Shadow's forms are literally a reference to Dragon Ball. Super Form - Super Saiyan, Hyper Form - Super Saiyan Blue or Mastered Ultra Instinct.

But about Ultra Sonic and Goku, I can only say that they are similar only in the name of the form, that is, "Ultra". Ultra Sonic in some Sonic sprites is almost a copy of Ultra Instinct Goku, in terms of pose. In the video, you can see Hyper Sonic's "idle" pose is almost identical to MUI Goku's pose.
