    Hey, first off thank you for posting this even if you feel it was a 'fail'. It is important to know there will be setbacks in BBQ, especially with Offsets. I would highly recommend getting a temp probe on your grill level because it was likely hotter than you could tell with the built in probes on the lid. It may have given you a chance to move the brisket or cool it down faster if you saw it reaching 300F or more and save the cook. Beyond that it looks like you did a solid job, these smaller offset grills really present a challenge with fire management and the temp swings can be big every time you have to add wood, some of your splits looked a bit large for your pit so consider avoiding those when you're doing a low and slow cook.

Thanks so much for the kind feedback, I'm excited to try a big brisket again and will definitely get some probes for the grill level. Thanks again!
