Chanthy Phan as for authentic fermented we never add garlic when we make this. If you need to steam like fish or pork you may add some garlic to it . But you can try for your own preference.

You can’t if you prefer tough texture in meat. You just need to do like the pork . Try it
For the 12 days fermented do you jar in fridge or at room temperature??
