||Rajasthani Pyaz Ki Kachori||आसानी से घर पर बनाए राजस्थानी प्याज़ की कचौड़ी||
Ingredients:
For the Dough:
• 1 cups wheat flour ,Half cup sooji
• 2 tbsp ghee (for moyan)
• ½ tsp salt
• Water as required
For the Stuffing:
• 2 large onions (finely chopped)
• 1 cup gram flour (besan)
• 2 green chilies (finely chopped)
• ½ tsp ginger paste
• ½ tsp fennel seeds (saunf)
• ½ tsp cumin seeds (jeera)
• ½ tsp turmeric powder
• 1 tsp coriander powder
• 1 tsp fennel powder
• ½ tsp red chili powder
• ½ tsp garam masala
• Salt to taste
• 2 tbsp chopped coriander leaves
• 2 tbsp oil
• Oil for deep frying
Instructions:
1. Preparing the Dough:
1. In a mixing bowl, add flour, salt, and ghee. Mix well.
2. Gradually add water and knead into a soft dough.
3. Cover and let it rest for 20-25 minutes.
2. Making the Stuffing:
1. Heat 2 tbsp oil in a pan.
2. Add cumin and fennel seeds; let them splutter.
3. Add green chilies and ginger paste, sauté for a few seconds.
4. Add chopped onions and cook until they turn slightly golden.
5. Now, add turmeric, coriander powder, fennel powder, red chili powder, and salt. Mix well.
6. Add gram flour (besan) and cook on low heat for 3-4 minutes until the raw smell disappears.
7. Finally, add garam masala and chopped coriander. Mix well and let the stuffing cool.
3. Assembling and Frying the Kachoris:
1. Divide the dough into small portions.
2. Roll out each portion slightly and place 1-2 tbsp of stuffing in the center.
3. Seal the edges tightly and gently flatten them.
4. Heat oil in a pan and deep-fry the kachoris on low flame until they turn golden brown and crispy.
5. Repeat for all kachoris and drain excess oil on a paper towel.
Serving Suggestions:
• Serve hot with green chutney and sweet tamarind chutney.
• You can also enjoy them with curd and chaat masala for extra flavor.
Tip: Frying on low flame makes the kachoris extra crispy.
