  • Chicken and Vegetable Rice
    Ingredients:
    1 medium onion (chopped)
    300 grams chicken breast (diced)
    1 cup green beans (chopped)
    1 carrot (chopped)
    2 to 3 tablespoons tomato paste
    Spices (turmeric, pepper, cinnamon) to taste
    Salt to taste
    2 cups water
    Rice as needed
    Cooking oil as needed
    Instructions:
    1. Sauté the Onion: In a pot, heat some oil and sauté the chopped onion until golden and soft.
    2. Add the Chicken: Add the diced chicken breast to the sautéed onion and cook until it changes color.
    3. Add the Vegetables: Add the chopped green beans and carrot, and sauté for a few more minutes.
    4. Add Tomato Paste and Spices: Stir in the tomato paste, spices, and salt, mixing everything well.
    5. Add Water: Pour in the 2 cups of water and let the mixture simmer until the ingredients are cooked through.
    6. Prepare the Rice: Cook the rice until it's halfway done, then drain it.
    7. Layering: In a suitable pot, place a layer of the vegetable mixture, followed by a layer of rice. Repeat this process until all the ingredients are used.
    8. Steam: Drizzle some oil over the rice, cover the pot, and let it steam for about 30 minutes.
    9. Serve: Serve the chicken and vegetable rice on a platter, alongside salad or yogurt.
