If you look up 'Mauritian Napolitanes' they are round biscuits but a similar type of baking ingredients, baked then strawberry jam added and sandwiched inbetween 2 bicuits and covered with a pink glossy icing over the top. Lovely!
Thanks for sharing this recipe. The only change I made was to add 1 tbsp of pure almond extract. It turned out beautifully. I will definitely make it again.

Made this last week, my neighbour had made homemade plum jam, so put that in the middle. The shortbread turned out beautifully, thanks for this recipe, it was easy to follow as well.

OMG, I can TASTE this! I love raspberry jam and also black currant jam. And apricot preserves. Not a marmalade fan, either. Shortbread with tea is the best combination. Lovely! Thank you!!! 🥰🥰🥰

I have some dried figs that I could make jam with for this, kind of like a fig newton here in the USA. I hope Jasper does poke his nose in for us on Saturday. That looks so good! For any Americans or Canadians, caster sugar is superfine sugar in our part of the world. If you can't find that, you can try using Domino brand sugar, which has smaller granules than organic sugar. And cornflour is cornstarch.

I made Paradise cake at college in Paisley many moons ago. Biscuit base, fruit in the middle and sponge on top. Have you ever made this? I'd love a tutorial because I forget how I actually made it. I found the dough a bit too soft to roll out so used my hands to press it into the tin, turned out fantastic, just melted in the mouth, this will now be a regular bake in my house😋

We used to use regular flour + rice flour for the shortbread. Looks scrumptious!!!

My local bakers does something very similar - Jam Slices.
I’ve been eaten them at the same bakery since I was 6 - those ones don’t have almond though.
i have been looking for a recipe to use apples instead of jam-Perfect!
