Chocolate Mashed Fante Kenkey

SERVES: 2-4
INGREDIENTS
1 fante kenkey
2 tbsp sugar
4tbsp powdered milk
A handful of roasted hazelnuts
1 tbsp vanilla essence
300ml milk
3 tbsp unsweetened cocoa powder
A handful of raspberries
A handful of toasted peanuts
Ice cubes (optional)
DIRECTION
• Peel, wash and cut the fante kenkey into pieces.
• Pour into a blender, add sugar, powdered milk, roasted hazelnut, vanilla, milk and blend into a smooth mixture.
• Pour one-third of the mixture into a small mixing bowl, add the unsweetened cocoa powder and whisk into a smooth mixture and set aside.
• Pour the blended kenkey into a serving bowl, topped with the chocolate mixture then using a skewer, swirl the chocolate mixture into the plain mashed Kenkey mixture
• Top it with raspberry and toasted peanuts.
• Chocolate mashed Fante kenkey ready to serve.
