Working in a CA prison for 9 years and going, from 2015-2019 they got some pretty good food, things like: hot links, eggs, cookies and cake made in our main kitchen, and a lot of the desserts came from stores getting rid of stuff like Home Run Pies or other baked goods. Then the 'healthy' meal plan took effect. It is much more nutritious but dessert is now plain yogurt, other foods like oatmeal and beans and salad take a larger effect as well as 'soy meat alternative' instead of beef. So better for you, but not better tasting.

I was in the fed system from 2005-2009. Alot of our food was expired that they got for pennies on the dollar, and often poorly made. I cracked a tooth on a pebble that was in our unwashed beans. It really depends on the food service staff, because at two other places I spent during transfer it was much better. Shit food can cause riots, just so you know.

I won’t lie it’s still not good However dietary guidelines are considered, special vegetarian or vegan plates are offered, as well as religious diets. Meals are regulated to create 2000 calories per day per inmate and each meal needs a protein, a vegetable, and a grain. Also inmates do all the cooking and serving, most meals are made from scratch since cooking from scratch is usually cheaper. Meals also rotate on a 4 week round so they never have the same meal more than once a month to add variety. If you have any more questions just let me know.
Anything sharp or heavy is locked down with cables. All kitchen tools are locked up when not in use, signed in and out so we know who is using what, and returned after it’s done being used.
