Could it be done? Absolutely. Bungee a duffle bag to the back and tuck behind that windshield all the way to South Dakota! As the guy that did this video, I like my Milwaukee 8 Softail too much.
I've actually made that trip back in 2005 on a 2004 wide glide from coastal NC. 2000 miles each way. 5000 miles total in 8-9 days. I felt like I was beat up when I got home. I would advise you have an engine guard with hwy pegs or a linby bar so you have different places to put your feet. Floorboards would help as the arch of my feet were very sore. Don't forget gel padded gloves and if you have a half shell helmet put lotion on your face or the wind burn will be brutal. A back rest will help a lot too, I used my tbag luggage. I took a similar trip on a 2004 Electra glide and had no issues at all.. much better for long trips. I plan on taking a trip in a few weeks on my 2013 wide glide (route 66) but I don't plan on doing 700 miles days. 200 miles a day or so should be much better and this time I've got all the time in the world. Also, it's hot during the day but gets cold at night so take some leathers. If you don't have a full face helmet you need lotion, lip balm and qtips as your ears will fill with some nasty crap. Also take some fuel bottles, you might need them. For some reason they made the fuel tanks smaller when they changed it up the FXDWG (4.7 vs 5.1 gallons). The Electra glides actually got a bigger fuel tank in 2008 (5 vs 6 gallons). Oh yeah and don't even consider taking the trip on the later model wide glides with the stock saddle, I recommend the wide mustang seat with rider back rest. Actually, a FLH would be much more suited to the trip.

As much as the bags make the bike uglier, they are way too handy to let go. Just for the quick groceries you might grab while riding.
