⬇️⬇️English recipe follows ⬇️⬇️ 芝士龍蝦脆麪: 材料: 龍蝦2隻(2斤) 麪餅4個 芝士5片 牛油50克 雞湯200毫升 鮮奶80毫升 處理: 1. 龍蝦,1開2,除去爪子、鰓及內臟。 2. 龍蝦每邊1開2。 3. 清洗乾淨,擎乾水。 4. 先做脆麪底: a. 中火在鑊中燒熱400毫升油。 b. 放麪落鑊,鋪平。 c. 煎脆一面,反轉另一面繼續煎。 d. 兩面都煎脆,夾起,擎乾油,放上碟。 5. 龍蝦,沾上少許生粉。 烹調: 1. 中火在鑊中燒熱600毫升油。 2. 放龍蝦落鑊炸。 3. 炸透龍蝦,擎乾油,放上碟。 4. 洗乾淨鑊,放牛油,慢火煮溶。 5. 放龍蝦吸收牛油香味,炒勻。 6. 加入雞湯200毫升及清水150毫升。 7. 加入5片芝士煮溶。 8. 加入生粉芡。 9. 加入100毫升鮮奶,煮滾,放在脆麪上,完成。 Crispy noodles with lobsters and cheese: Ingredients: Lobsters 2 Nos.(2 catty) Dried noodles 4 Nos. Cheese 5 slices Butter 50g Chicken broth 200ml Milk 80ml Preparation: 1. Lobsters, one lobster gets divided into 2 shares. Cut away claws, gill and intestines. 2. Each share is to be cut into 2 shares. 3. Rinse thoroughly and hang dry. 4. Prepare crispy noodles: a. Heat up 400ml oil at medium flame in wok. b. Flatten noodles in wok. c. One side has been cispy fried. Flip over, continue to fry. d. Two sides have been crispy fried. Hang dry the oil. Put on plate. 5. Lobsters, mix with little tapioca starch. Steps: 1. Heat up 600ml oil at medium flame in wok. 2. Deepfry the lobsters. 3. Lobsters have been deepfried well. Hang dry oil. Put on plate. 4. Rinse the wok. Melt the butter at low flame in wok. 5. Put lobsters absorbing the flavour of butter. Fry well. 6. Add 200ml chicken broth and 150ml water. 7. Melt 5 slices of cheese in wok. 8. Put tapioca sauce. 9. Boil up 100ml milk.
