家鄉炒粉絲:
材料:
粉絲300克
甘荀1條
冬菇8隻
雞蛋2隻
調味料:
豉油
鎮江醋
處理:
1. 冬菇浸軟。
2. 粉絲浸軟,加入1茶匙老抽上色。
3. 甘荀刨1條條,然後切絲。
4. 冬菇切絲。
烹調:
1. 放少許油落鑊煎好蛋餅,切蛋絲。
2. 粉絲已浸透,擎乾水。
3. 煲一鑊滾水,將粉絲出水至軟身,擎乾水。
4. 放1湯匙油落鑊,中火燒熱。
5. 放甘荀絲及冬菇絲爆香。
6. 加入粉絲炒勻。
7. 加入1湯匙豉油及1湯匙鎮江醋炒勻。
8. 加入1/2茶匙糖炒勻。
9. 加入蛋絲,炒勻。
10. 最後加入1湯匙回鑊油,炒勻,上碟。
Fry vermicelli in home style:
Ingredients:
Vermicelli 300g
Carrot 1 No.
Mushroom 8 Nos.
Eggs 2 Nos.
Seasoning:
Light soya sauce
Zhenjiang vinegar
Preparation:
1. Soak mushrooms until they are soft enough.
2. Soak vermicelli for 15 minutes. Colour it by adding 1 tsp dark soya sauce.
3. Slice the carrot, then get it shredded.
4. Shred the mushrooms
Steps:
1. Heat up little oil to fry egg pie well. Then get it shredded.
2. Vermicelli has been soaked well. Hang dry.
3. Boil up a pot of water. Soak vermicelli until it is soft. Hang dry.
4. Heat up 1 tbsp oil at medium flame in wok.
5. Fry shredded carrot and mushrooms for 1 minute.
6. Fry vermicelli well.
7. Add 1 tbsp light soya sauce and 1 tbsp Zhenjiang vinegar. Fry well.
8. Add 1/2 tsp sugar. Fry well.
9. Add shredded egg, fry well.
10. Finally, put 1 tbsp oil, fry well. Serve.
