Today on the Educated Barfly we’re getting into another liqueur that’s been really popular for the last few years. Like St. Germain it’s really easy to cut it into existing recipes to add new flavor profiles to some of your favorite cocktails and of course your own creations. It’s floral, lightly sweet, and easy to use and it has a surprising history. The Liqueur in question? Italicus Bergamot Rosolio.

@Emanuele Di Stadio Sazerac bitters are the essential flavor, orange bitters are optional and Angostura would make it an old fashioned or modified whiskey cocktail. Sazerac bitters are delicious and often a bit cheaper than Angostura bitters, definitely worth picking up a bottle!

I've recently been on a kick of using Italicus in various drinks with olive oil washed gin, given how nicely Italicus goes with olives. My most successful so far:
    1 oz. Italicus
1 oz. Olive oil washed London dry gin
    1 oz. Cocchi Americano
Build in glass, stir with cracked ice, three olives for garnish.

Hi Leandro and Marius. Thanks so much for passiong on all that bar education. You’re definitely my favorite cocktail chanel. Last weekend my girlfriend had bought some bergamots, so I decided to do an earl grey sour. I infused some Twinings Earl Grey in vodka, mixed it with bergamot juice, simple sirup and egg white, and gave it a twist of bergamot peel. Delicious. Two notes to that: It takes more tea than expected to get some bitter tones from the tea. And the bergamot is sweeter and less sour than a lemon so adjust simple sirup and juice accordingly. Yours Oleg

I put a small shot of Italicus in a French 75, and call it a "Garibaldi Legion", after the Italian Regiment of the Foreign Legion stationed in Mailly-du-Camp in Champagne during WW1. The Italicus adds a delightful layer of citrus and herbal notes to this classic Champagne cotcktail...

As others have mentioned, I needed this video because when I got my bottle of Italicus I was a bit disappointed with it. It's not just a bergamot liqueur but also of a special type of lemon. Once one reviewer I saw refered to it tasting like flat Sprite, that's all I could taste. So I've been struggling to use it. I often wish it was a straight, strong bergamot liqueur without the lemon. My most recent attempt to use it that I was happy with was a riff on a pisco sour, bringing it back to Italy with grappa, a Grappa Sour if you will (it's still a little bit of a work-in-progress with some different optional elements still being worked out):
    2oz Grappa
    3/4oz Italicus
3/4oz Lemon Juice (can be combined with Lime Juice to total 3/4oz total juice)
    1 Egg White
    (1/4oz 1:1 Simple, optional)
    (2 dash Grapefruit Bitters, optional)
I haven't yet tried all of the combinations of the optional elements yet for final tweaking but I think the concept works in the versions I've made. I'd appreciate any feedback on the cocktail.

this cocktail seems delicious! we can see it working well with Pisco or Grappa - also Tequila or Mezcal..try 50:50 with Italicus and a bit of lime juice.. you won't be disappointed!

  • @abnormalprophet

Fan of part 2... I use Italicus similarly to a dark amaro. Specifically, a Black Manhattan might use rye with an amaro, while I use gin with Italicus to make a "White" Martini (or tequila/mezcal to do a "Blanco" Martini). I don't like using refrigerator space for vermouth that I use infrequently at home, so amari, Suze and now Italicus can provide shelf-stable alternatives to vermouths to make higher proof Martini/Manhattan variations. Hope this helps someone else!

All these recipes look amazing. Definitely going to try and find Italicus. Quick question, for the Coffee and tonic, because Italicus is the main spirit in it, I’m assuming that you wouldn’t get super drunk after having a couple. Is that true? Keep up the amazing work Leandro.

It's great in a mezcal paloma, with 25% of the mezcal substituted with Italicus (and a small reduction in the amount of simple syrup to compensate for its sweetness):
    1.5oz mezcal
    0.5oz Italicus
    0.5oz simple syrup
    0.75oz lime juice
    1oz pink grapefruit juice
    a pinch salt
    soda water
Shake, strain over ice in a Collins glass, top with soda water and garnish with pink grapefruit peel.

On the one hand, one would expect a Liqueur called Italicus to put a whole new slant (though not a bold one) on things. On the other, it sounds like something out of Warhammer 40k. On the gripping hand, I don't get a sense of where sundew comes into the flavor profile, or how much is in there because, and I'm not usually this kind of guy, it's got really specific ecological requirements, and it would kind of suck if it went away from overharvesting. Toss a guy a bone here and set my mind at ease on that one.
