    Just made this. I used powdered peanut butter mixed with little bit of water and a pinch of Himalayan salt. I swapped the bell pepper with thinly sliced carrots. I also used a little hoisin sauce. Turned out amazing.

    Thx for cutting in in half horizontally. I had heard the strands are much longer that way but had never seen it after it was cooked. I have always cut it vertically. If you use the actual squash to serve as bowls, it all fits in the squash better if cut vertically, and it also may cook quicker too(?), but I'm glad to have now seen it cooked/cut the other way.

      I'm finding that I'm use zoodles and spaghetti squash just as much--if not more--than flour noodles...I know my waistline appreciates the break

    That looks amazing! Just like the pad thai from one of the food carts! I live in Portland,OR so food carts are huge here....but this looks fast and definitely easy! looks like the longest part is just waiting for the spaghetti squash to cook! lol will be adding this for SURE to my meal prep for this week.....thank you!

      yeah...the spaghetti squash part is by far the longest. We spent about a month in Portland around the holidays and really enjoyed it...I did see quite a few "corrals" of food trucks in Portland...not sure what else to call it ...seemed like a group of food trucks would get together and set up a permanent "food truck park" in a neighborhood, almost like a food court....I saw one selling BBQ jackfruit, which I really like

      This is a spaghetti squash not a butternut squash! They are very different

    Very nice ! U have beautiful tricks up ur sleeve. I just wanna suggest paprika in a pad is what they use in Thailand and sugar or monk fruit sugar. No garlic. for the finish after the green oignons and peanut, sprinkle lime juice. Just suggestion. Love ur channel. Best collyflower pizza dough ever.

      You won't mistake the texture for pasta when you eat it, but it makes a great noodle as long as it's not overcooked

    Chef Buck! The Buckster! Buckman! Yea, we've done the spaghetti squash thing while underway, and yea, it's really good. Our secret is that you have to have really good sauce.

      we moved out of our Seattle apartment at the end of November and we've been house sitting since then....been in 4 different kitchens so far...been fun, but really makes me appreciate having my own kitchen that I've outfitted and set up for myself

      I miss having a yard....just went to buy basil the other day and it was so freakin expensive...if we ever settle down again with a plot for a garden, planting some veggies and herbs will be one of the first things I do

    Don't throw those seeds out! They are heavenly if you bake them. Toss in olive oil and salt, bake those suckers on a baking sheet at the same time you cook the squash. They are fantastic!

      thanks...we're staying in a super beautiful home--very nice kitchen. It's near a small town with no Asian dining options other than the dishes we make for ourselves at home, that just makes me crave Asian style dishes even more

    I now learn another recipe of Pad Thai which you will never find in Thailand. In Thailand, we created a menu for the G.I. during Vietnam war call American Fried Rice and you will never find this dish in the US too:)

      we took stuff mostly to Alliance on Broadway and the Goodwill down in the ID, which is mostly where we got all our stuff....I'm gonna miss Seattle thrift stores...2nd hand stuff in Seattle is head and shoulders better than most of the 1st hand stuff I've ever bought--if memory serves me right--I rarely buy new stuff...I fear I'm getting a little cheaper ever day
