You can make an omelette out of that. Slice the gourd thinly. Wash thoroughly with salt. Squeeze. Repeat process 2 more times. Saute with onion, garlic, tomato and right amount of salt, pepper and additives if you like. Can be half cooked or well-done depends on how you like it done then add the egg. Egg should be scrambled before putting on the veggie. Cook for 3 more minutes and there you go. Delish
