Congrats on the move mate! FYI 'Mate' is a gender non specific term, so feel free to say it to anyone you meet while in Oz. Also, we don't use 'ma'am' and 'sir' much in retail and restaurants - uness you go someplace fancy - so pronouns are super not an issue :)
