    I also am a baby boomer. The cross contamination in my kitchen is probably epic! As far as I know, no one’s gotten sick in the 54 years I’ve been cooking for my family and friends. 😊

    Thanks for your preparation beforehand so everything went smoothly. I don't have much patience for what we (in Scotland) call 'faffing around/about' as I lose interest quickly! I think it's a sign of a good teacher anticipating what can go wrong. The steaks look delicious.

    Everything looked great. In the future, try using lump charcoal. Burns cleaner and lasts longer. Take care.

    We have a small Big Green Egg. It's good for slow smoking things like pork, beef brisket, and many other things. Takes some getting used to it. I highly recommend a good remote bbq thermometer where can check heat while indoors. What I am not sure of is if one your size can hold the heat long enough. Ours barely does and is larger. Good luck! And yum! 🥩

    Perfect steaks! I’m going to have to show this grill to my husband. We have larger grill but just for the two of us, I’d prefer the smaller grill. Hope you had a wonderful time with family.
    I’d like to add to those that feel the need to make a comment that they’d never eat at your house do to cross contamination, I’m guessing they never ever eat out at a restaurant or fast food place. Also, never eat prepackaged foods. 😂😂

    Another wonderful video and those steaks look exquisite. I miss grilled steaks and would love to have a small grill like this! Oh …. dry brining IS “a thing”. It’s a legitimate cooking technique.

    Just found your channel. It’s great. Very informative. I’m amazed how judgmental people are , sure if you’re cooking for public , but they need to go eat some dirt . Get some cross contamination from meat that fell on the floor . lol I’ve eaten raw meat and cooked meat and never got sick. Like you, I’m a boomer and grew up eating whatever including dirt. lol. Love the video. Just starting carnivore so this is helpful. 😊

    Did you need to add more charcoal for the second batch of steaks? I am intrigued by the ceramic construction and wonder how that changes grilling. I am not a grill master and we went old school and bought a smoky Joe when the pit boss died. Now we need to build a grilling station to help block the wind. Why is it always blowing a gale when we want to start cooking🤔

    Hi, Tim! Looks like it made an excellent steak!! I like the size, but I'm not convinced about the portability of the grill. It also looks like it could break easily. I'm good at breaking things!!       Sure! I kept closing the vents down before the charcoal had turned grey. That nearly put out the fire. When I finally left it alone, I did much better. :). Zack was giving me tips on this style of grill (off camera) because his dad has an Egg which is a much larger version of this one.

    Wow. Now there’s a thing! I think my son-in-law has something similar. Bigger and red. He controls it with his phone somehow even though it uses fire wood or charcoal. He lives in London. Perhaps it’s a London thing.

    Maybe they are saying it isnt a brine because its dry and they are thinking of something like pickle brine? Idk, I always thought it was dry rub or marinating in a brine.

      We turned them about every 2 minutes until we had the internal temp we wanted. Not really sure of the final time.

      Tim’s channel is still GREAT!!! Sorry you feel this way but I totally agree with other posts that this is very unfair statement. Tim is a man of deep character & integrity. I can only imagine the level of effort it takes to do everything he does to create the content & make a video. And…he does it so amazingly well & is very transparent about what he does.
