Absolutely agree. I’m a home cook and have cooked professionally. Even with a “fair” quality SS set, it’s more important to your cooking to understand how to use your heat source and to be familiar with the particular properties of your pots and pans.

Correct Deymyere CAN be used with broiler well above 500F, it says so, however it also says that there will be a permanent discolouration above that temperature.
So while you can do it without inflicting any functional damage to Deymyere dont do it, as it would be a pitty to such a pretty pan!

Now it's just me, and I find myself using a few old Lodge cast iron pans, but mostly a carbon steel wok and I don't even know what the name is or where I bought it. I use it for everything. If I was younger and didn't have so much cookware, I would be interested in the Legend though. Probably the copper, if it's not too heavy. It's a very pretty set of pans. 💕💕💕

For construction quality Legend is just as good but made in handles are a little more comfortable to hold. I find that I only really appreciate high end SS on a few select pieces. A copper core skillet is expensive, but a dream to use for acidic foods. I like my stockpot and sauce pans to have a nice sandwich for heat dispersion. I really don't need sandwiched sidewalls or copper core in these applications.
The vast majority of my cooking is done in carbon steel or cast iron, and these are preferred, but they are heavy, cannot handle acidity, and will be destroyed by strangers who don't know how to properly care for them.

I’ll stick with my All-Clad 5D pans. I’m just one person, so I don’t need a cookware set. I buy a pan as I need it, and I needed a new skillet. I’ve used my All Clad 5D stainless steel nonstick fry pan 3 times so far. I love it, food glides around the pan, and I don’t need to put much olive oil in pan. I finally figured out how to get more caramelization on onions, cooking them longer. Cooked shrimp with onions, garlic, and organic baby Bella mushrooms. Came out delicious using a little Tamari sauce. What I like about All Clads website, they have 4 videos for each of there lines. A chef shows you how to clean and use them, also to use them on medium to low heat, not on high. Next pan I might get is there stock pot/Dutch oven. Debating whether to get there 5D all stainless steel or the stainless steel with nonstick. I have two of there hard anodized 4 quart and 2 1/2 quart non stick when they were on sale. The skillet cleans up beautifully.

    • @AwareHouseChef

The more affordable stainless steel looks like a great set. I’m gonna look into them and see if they sell separates. have an old Marco Pierre White 3.5 liter quart pot that is stainless steel with a very thick copper ring around the bottom. It’s not a disc of copper, it’s more like a thick band of copper. I think it’s discontinued. It’s a heavy pot and it cooks beautifully. Copper definitely is superior to all other metals for cooking, but I really don’t enjoy lifting heavy cookware and copper is so $$$. I saw a video from the guy on the Prudent Reviews channel who did a review of their fry pan and he showed his pan with the handle that came off. It popped off when he picked it up one day. He said they sent him another one and he thinks they fixed the problem, but I wasn’t surprised. Riveted can be a hassle to clean around but heavy pots and pans need them. There is a high end brand whose name i can't remember that has the rivets underneath a sheet of metal so you don’t see them. I'm scared to buy any enameled pots or pans from China over lead fears. I didn't know their stainless steel can be dangerous also.

I'm sometimes tempted to buy a set, but the price often stops me from doing so. This mish mash of pots mean i cannot stack them. I need 2 cupboards to store them. This is why i am considering a set. • @AwareHouseChef
      @AwareHouseChef  6 місяців тому

Most likely because it would be incredibly expensive if it was solid stainless steel. Manufactures have figured out a way of adding certain metals into the middle of stainless steel so that the heat distribution is better and more efficient. This is proven to be a huge plus when you’re dealing with induction it is definitely not something to avoid. But you should avoid what they call a clad bottom because those are a sign of an inferior set of stainless steel cookware. Hope that helps! All the best!

Also, broilers can reach temperatures at least into the 900°F range in a home.

LOL - the 5 ply is now 599,00, so much for the video's 199.00 price tag!

Haven’t checked but I believe it. Things have doubled since I released that video. I hope something gives. All the best.

CyberMonday deal is $494 for the 14pc SS on Amazon; No sale on the 14pc Copper Core: $999. I've been waiting to see if the Kirkland CC would be back, but after seeing this, I think I can give-up on that now. There is a members only price for the All-Clad 14pc Copper Core set thru Costco: $1,349.99. I believe I like the selection of the All-Clad set better. The price... not so much.

It is thought to find quality stainless at that price. Your best bet would be to buy individual pieces at a store like Marshals or a really well maintained used set.

I’m going to give away my age a little.
The problem with some of the younger people is they think they can buy their way into being a good cook.
    The age of instant gratification.
Sorry but it ain’t gonna happen.

Part gift, part discipline, lots of time in the kitchen and some descent equipment. No way around it.

@@AwareHouseChef I think a desire to be the best and always improve is key to being a good cook.
This whole series on cookware reminds me of people that buy 800 dollar fishing reels and rods.
Don't buy junk but you don't have to buy the most expensive thing out there either.
Our first set was magnalite and I still use it almost daily.
That stuff wasn't cheap either but we got it on sale in the early 80s.

I would rather spend a little more money and buy Made in America pans than made in china. And I disagree with you that the workmanship is the same. Chinese made products are far inferior!!😅
