You sound IDENTICAL to my grandmother who essentially raised me and showed the most unconditional love of anyone I have ever known. I had to play your video 3 times just to hear her voice again. Okay *clears throat*, perfect tutorial, delightful humor and a beautiful finished product. I've made kaiser rolls a few times now and you showed me that I've been rolling my strips too long and thin. I guess I've just been fearful of overworking the dough or doing something else that would ruin the rolls. I'll now make them shorter and a bit thicker and be a bit more determined with them, lol! To add, I think I would have been your 4 year old great-granddaughter. I was quite a chatty girl back then and had lots of questions and Grandma was so patient like you and answered them all. I was fortunate enough to have all of my grands and greats and even a great-great-grandmother (Granny Ivy who lived to be 118 years old!) alive when I was growing up. Maybe. I am low carb right now so I had to move bagels to the bottom of the list. The Italian Bread can be used as pizza dough. I rarely make pizza, but that is what I use. I cook it a little first, jut to dry it out a little, then add toppings and finish it off..
Debbie...in process of making your kaiser rolls right now which we love to have...never made them...when done and cooled...how do I store the extra ones?? Ice box? in plastic baggie? in freezer ? Also, is the malt flour you use..is that like gluten powder?? where do you get it and how much better is it with this?
It is not a gluten powder. It is a barley flour which adds color and taste. It is available on Amazon. I do not refrigerate leftovers is they will be eaten in a day or so. Anything beyond that and I would keep them in the fridge. Homemade bread does not contain all the preservatives that grocery store bread does. It will allow mold growth more quickly.
Be careful equating AP flour for bread flour. I tried to make a loaf of bread with White- Lilly AP flour yesterday according to the recipe I use for white bread and would have needed my Stihl chainsaw to slice it. We fed it to the birds. The problem with AP flour is it has no protein or gluttons, so the bread will not rise properly or develop the structure we normally expect.
AP flour does have gluten. It is about 12 to 13 percent gluten. Bread flour is 14 percent gluten. Bread flour makes a stronger, firmer bread, but there is not a lot of difference. I use AP flour all the time for bread with no problems at all. The texture with AP flour is a little more tender, in fact.
Debbie's Back Porch I got a new KitchenAid mixer for my birthday and threw together my first batch, last night with bread flour. My knee hurt so bad I threw it in the fridge over night. I have it in the oven with a pan of boiling water underneath to finish its first rise. It was a lot easier than in my Breadman and the dough ball licked the sides of the mixing bowl as clean as a button. It was beautiful dough in about 10 minutes.
Just wondering? Couldn't you place them in a " boiling water for about 30 seconds, flipping once, like pretzels? Where the brown perfect on the outside and the inside soft? I will be trying these. They look great!
I don't think so. This is not bagel or pretzel dough. These are browned nicely and soft inside. Anyway, they would not be Kaiser rolls then. They would be something else.

If you are weighing, it doesn't matter. It will weigh the same either way. When you are measuring by volume, sift first.

Can I use this recipe to make hoagie rolls?
Yes you can!
I make an 800 gram recipe which makes a 1400 gram loaf, which I divide into 14, 100 gram rolls.
What can you use if you dont have bread flour?
All purpose is fine.
