MDF is porous, this is a problem for any vacuum. You could overcome/compensate for it with a larger volume vacuum pump, but that would get costly. Your packing tape idea is a good one. I haven't tried but possibly just sealing with shellac would help close up the pores in the MDF.

Yes, the mdf IS porous. you can use it as vaccum holddowns ;) just remember to seal around yor vaccarea and the bottom
