In 2009, I entered my Jalapeño Cucumber Pineapple Madness recipe in the "regular (non-hot)" category at the local salsa competition. It won FIRST PRIZE!! This salsa contest is held each year in conjunction with the Annual Los Gordo's Chili Contest located near my home in Baja California (Mexico!). The annual contest is filled with the local tastes, music and flavor of Baja, Mexico. It's a true experience and one I try to participate in yearly! It's a fun filled day that brings out the locals, the foodies and some friendly competition!

Wasn't there mention of a mango in this salsa?

Didn’t see you cut or include the mango. Otherwise it looks good. I make this all the time but have not put in jalapeños before.

where is the onion, mango, etc.???

6 minutes of talking and cutting the pineapple. Mango was in there, but showing us how to cut it would've taken another 6 minutes. Maybe do a fast forward for each ingredient being prepped and skip the 2 minutes of just talking for a 7 minute video.

So you say it's award winning but yet you failed to show us how you cut up the mango. Why is that? Is it because you used canned mango? Or maybe the ones that come in the fruit cups? I'd like to know how to cut a mango, so I was a bit disappointed when you skipped over that part.

What award did this win? Just curious why you spent 80% on putting pineapple into the bowl and zero discussion on the mango? Did I miss you putting it in there?

Not tasty? (Insert shocked face here) The core has always been my favourite part of the pineapple hahahahaha. Just shows how people can differ :) Great recipe.

This salsa looks really great, but do you know of anything I could replace the cilantro with? I can't stand the taste or smell of it, but most mango salsa's seem to have it. Any ideas would be appreciated! Thanks!

I hate cilantro too!! But I heard mint is a good replacement but to me It's ok without it. I'd rid the earth of it if I could!!

Spend $8 and get a spiral pineapple cutter, twist it in and pull your pineapple meat out, it’s cored and peeled in 30 seconds!!!

I use mint in my salsa because I'm one of the people who thinks cilantro tastes like soap. Mint is a nice alternative, especially in salsa that includes fruit.
