Raw vegan mediterranean pasta sauce recipe - with zucchini noodles !

- Hi everyone ! :) Today I am going to show you how to make a delicious, creamy, healthy and vegan pasta sauce with a mediterranean (or italian) twist. I am moving from the south of France to Paris, so I am enjoying sun packed recipes for as long as I can ;) ! This sauce will be delicious with zucchini pasta for a healthy snack or meal, and maybe even more with some regular spaghetti (because hey, can't beat delicious pasta !). I like mine a little crunchy, but feel free to add more water or broth and blend it longer to make it creamier ! If you have the patience, you can also soak them in water for 30min or overnight. The great thing is that the cashew nuts and the water are the base, and then you can really adapt the recipe to your liking and choose whatever you want to add. For an extra humpf, I'd suggest you add diced sun dried tomatoes and shredded leaves of basil to this recipe ! ;) It will be even better. If you enjoyed this video, please give me a thumbs up ! :)
Ingredients (serves 2, I used half the sauce for this video and ate the rest the next day with spaghetti) :
- 1 cup of cashew nuts (preferably soaked in water for 30min to 1night)
- 1 cup of water or broth,
- A handful of sun-dried tomatoes
- A few leaves of fresh basil
- Lemon juice
- Salt and pepper,
- 1 zucchini or spaghetti.

I waited months to decide myself and since I have it I have done soooo many things with it : there are 3 blades for 3 different results, you can spiralize pretty much anything ! I especially love using it with zucchini, potatoes and SWEET POTATO !!! Soooo yummy !!!! And then I wilt the sweet potato noodles in the pan or I put them in the over for a crispy light version without having to fry them... hmm delicious

+Ujwal Suresh Parekh Thanks for the suggestion :) I believe every ingredient here was not over 40/49°C (even the warm water). But I do often make sauces with fresh tomatoes and they are delicious :) I just had these dried tomatoes on hand this day.
