OK I made a test version of it completely following the instructions and it came out perfect and really delicious! I did though use a silicon loaf pan, instead of the metal one. I was able to pull out the Semifreddo with zero resistance from the pan!

Try using a sugar substitute (I like Allulose because it doesn't have an aftertaste and It reacts like sugar), making any adjustments for the difference in sweetness. Also, I would use an alternative for the thickener for the cherries (I like Glucomannan, about 1/2 tsp. that you can add without any more liquid - it won't lump like cornstarch.)

With regard to the "instructions, the first sentence reads as follows: "Cupcake ipsum dolor sit amet chocolate bar halvah carrot cake donut. Caramels chocolate bar donut cookie. Halvah apple pie apple pie brownie donut cheesecake". I checked this link several times and every time this is what I found. I copied this from your link and did not change a word. Perhaps you could check out the link.

Actually, instant coffee is one of the more common flavor boosters along with salt for chocolate. It doesn't taste like coffee, it just tastes more chocolatey!

They do have Elle Simone, who I love, but they don't feature her nearly enough, and I agree that they need MUCH more diversity. Chefs of color deserve more prominent representation worldwide. One of the (many) things I loved about singer Lizzo's Grammy performance is that her backing orchestra consisted entirely of black female musicians. Talk about a lack of representation!
People are not chocolate or vanilla. It is illegal to hire or fire people because of their color or ethnicity. Maybe ATK doesn't want to deal with a discrimination lawsuit.

Semifreddo was the recipe that brought me into Cooks Illustrated back in the 90s. Glad to see it make a come back on video!

I think you mean crème anglaise, which is a classic custard sauce and the base of custard ice creams.

That's not how I've seen Semifreddo made. Marcella Hazan made a very simple version. I think there were only four ingredients.
